25 pages, To foster the responsible development and governance of CRISPR, it is important to understand how agricultural communities perceive and discuss this technology. This study conducted a content analysis of 529 articles from 53 diverse agricultural news publications across sectors and U.S. regions between 2012 and 2022. We analyzed how CRISPR technology is depicted in terms of risk, benefit, social/policy context, quoted experts, and the mentioning of other biotechnologies. Our findings show that from the time that CRISPR was developed for agriculture over a decade ago, agricultural news has consistently reflected a pro-innovation stance, frequently describing its benefits as well as advantages over longer-standing biotechnologies. Industry representatives were quoted most frequently, followed by university scientists and political representatives, while producers and non-governmental groups were quoted least frequently. Technology-related risks (off-target effects, financial risks) were notably lacking, but CRISPR’s social context was covered more extensively, including uncertainties in regulation and consumer acceptance. We discussed the implications for agricultural news professionals, communicators, and future researchers, emphasizing the importance of fostering a more balanced discourse and ensuring informed decision-making within the agricultural sector.
27 pages, Precision farming is becoming crucial in the ongoing agricultural revolution due to its enhanced economic and ecological sustainability in food production compared to conventional farming. However, only a limited number of studies have focused on consumer acceptance of food produced through precision farming. To address this gap, an online experiment (n = 276) was conducted to investigate how production method information influences consumer beliefs of food quality (i.e., health, sustainability, and safety values), ultimately affecting consumer attitudes and purchase intentions toward precision-grown food. The findings suggest consumers exhibit higher quality beliefs, leading to more favorable attitudes and purchase intentions, toward precision-grown food compared to conventional food. This trend was observed when participants were presented with detailed information about the production methods employed in each farming system. In addition, according to the Elaboration Likelihood Model, our study reveals consumer innovativeness has the potential to amplify positive responses in terms of quality beliefs, attitudes, and purchase intentions toward precision-grown food compared to conventional food. Furthermore, our findings suggest that when detailed production methods are presented, precision-grown food may receive favorable quality beliefs, attitudes, and purchase intentions comparable to those for organic food, regardless of consumer innovativeness.
6 pages, Using an intercept method at two local farmers’ markets (n= 192), this study found the notion that local foods taste better and are more nutritious (i.e., lionization) and the notion that buying locally supports and contributes to the local economy and community (i.e., communization), positively influences consumers’ attitude towards shopping at their local farmers’ market. 26 pages, In the United States, there is a growing disconnect between consumers and their food source, leading to a lack of knowledge and trust in the agricultural food system. Urbanization has moved people away from farms, ranches, and food production; and the information consumers seek about their food is filtered through mass and social media. Portrayals of information about food production, specifically beef, from outside the agriculture industry often present polarizing and conflicting information about beef production and its implications for the health and well-being of humans, livestock, and the environment. This adds to consumer confusion and influences purchasing behaviors. Using a quasi-experimental pretest-posttest 2x2 factorial design, we sought to explore consumer (n = 60) perceptions, consumption, and purchasing behaviors of grass-fed beef and determine the effects of four information treatments on overall perception. Descriptive results showed consumers do not have a shared definition pertaining to grass- and grain-fed beef, citing the internet as their most referenced source for information about food and grass-fed beef. Results from a t-test indicated that exposing consumers to an information treatment had a significant effect on environmental impacts, cost, quality/nutrition, and overall perception of grass-fed beef. A between-subjects factorial ANOVA revealed there was no significant difference in perception based on treatment type. Efforts to raise awareness about beef production, on-farm practices, and links between food and grower could be warranted to help enhance the trust and credibility of the industry and bridge the gap between producers and consumers.

The food safety knowledge, attitude, and practices of vendors are important aspects, as these individuals provide food and nourishment at very low prices to people all over the world. Most street foods are unhealthy because of the high risk of contamination, which poses a serious threat to food safety. The present study aimed to assess the food safety knowledge, attitudes and practices of vendors and the most significant influencing factors of these aspects with the help of cluster analysis to categorize vendors. The present study focused on 100 vendors who were randomly selected from different locations in Lucknow city. The information was collected through a structured questionnaire using the KAP (Knowledge Attitude Practice) scale for food safety. Vendors were clustered on the basis of the KAP using two-step cluster analysis and a chi -square test to assess the impact of various personal factors on the KAP. The results of the study indicated that street vendors are significantly differentiated on the basis of qualifications, knowledge, attitude and practices. Awareness and training programs should be implemented to improve the food safety knowledge, attitudes and practices among vendors. Once food safety standards are acceptable, it will then be critical to ensure that poor people in developed cities such as Lucknow can earn a living through a "convenient" enterprise such as street food vending.
25 pages, We examine consumer willingness to pay (WTP) for foods packaged using active packaging which can be used to improve quality, shelf life, or safety of a range of products, potentially reducing the use of food additives (preservatives) and food waste. We administer an experimental survey of US food consumers (n = 2325) with five treatments. The surveys include contingent valuation exercises to assess consumer WTP for six products in active packaging relative to conventional packaging. We find that consumer acceptance of this technology is dependent on the product packaged and related directly to the specific relative benefit. In addition, consumer WTP is impacted by the framing of the technology in relation to other available technologies, information about the developer of the technology, and the degree of specificity of information regarding benefits. Notably, impacts of framing and use cases are primarily apparent among those who are resistant to the technology. A cluster analysis finds that those more likely to resist the technology include households that are lower income, less educated, and more likely to be white [EconLit citations: Q18, M31, D12, D83].

In this article, the authors use rhetorical framing analysis to explore how news coverage of this gardening boom presented the illusion of control framed around the themes of economics, food sovereignty, physical and mental health, and community and connection. It concludes with a discussion of how these four themes offer an overly-optimistic view of gardening that deemphasizes sustainability, focuses on processes over harvests, and ignores food chain inequities.
24 pages, Alternative food networks (AFN) are argued to provide platforms to re-socialize and re-spacealize food, establish and contribute to democratic participation in local food chains, and foster producer–consumer relations and trust. As one of the most recent examples of AFN, Participatory Guarantee Systems (PGS) have gained notable traction in attempting to redefine consumer-producer relations in the organic value chain. The participation of stakeholders, such as consumers, has been a key element theoretically differentiating PGS from other organic verification systems. While research on farmer participation in PGS is attracting interest, consumer participation is still widely overlooked. Using a mixed methods approach, this paper describes five PGS markets in Mexico, Chile and Bolivia. A survey was conducted with consumers in the PGS markets to explore their awareness of the PGS, how consumers participate in the PGS, and their level of trust in the respective PGS and its certified products. Results showed a low level of awareness of PGS among market consumers, few participation possibilities, and minimal consumer participation overall. Nevertheless, trust in organic quality was generally high. Consumers primarily relied on the direct relationship with producers and the PGS market itself as sources of trust. These results provide novel insight into PGS consumer-market interactions, and contribute to discussions concerning social embeddedness, awareness and participation within AFN.

The task of educating for sustainability needs to include food producers (farmers and livestock breeders). This article describes an educational experience carried out within the framework of a proposal presented in the “Second Call for Grants to Promote University-Company Projects” at the Technological Campus of Algeciras (Spain). It consisted of conducting in-depth interviews with farmers and livestock breeders, identifying the practices in the daily management of their farms, and having them participate in an education and training event in which they shared their knowledge. It was not an easy task because food producers have systematically been attacked by currents of opinion that blame them for causing greenhouse gas emissions. We adopted an approach based on empathy and on encouraging sustainable food production practices.
10 pages, Biosecurity in poultry farms represents the first line of defense against the entry and spread of pathogens that may have animal health, food safety, and economic consequences. The aim of this study was to assess biosecurity compliance in poultry farms located in a densely populated poultry area in North East Italy. A total of 259 poultry farms (i.e., broilers, turkeys, and layers) were surveyed between 2018 and 2019 using standardized checklists, and differences in biosecurity compliance between the poultry sectors and years (only for turkey farms) were tested for significance. Among the three sectors, turkey farms showed the highest compliance. Farm hygiene, infrastructure condition, cleaning and disinfection tools, and procedures were the biosecurity measures most complied with. Some deficiencies were observed in the cleanliness of the farm hygiene lock in broiler farms, as well as the presence of the house hygiene lock in broiler and layer farms and an adequate coverage of built-up litter in turkey and broiler farms. In conclusion, this study highlighted a generally high level of biosecurity in the visited poultry farms (probably due to the stringent national regulation and the integration of the poultry industry) and identified some measures that still need to be improved.
21 pages, Smallholder farmers in Pakistan are at the frontlines of the COVID-19 crisis as their livelihoods have been disrupted due to a countrywide lockdown. This cross-sectional study was conducted over the duration of two months, April and May 2020, with the aim to assess awareness of smallholder farmers regarding COVID-19, their challenges, and attitude towards governments’ lockdown strategies in Pakistan. The sample was composed of 384 cotton-wheat smallholder farmers from 1,403 villages of Bahawalnagar, Layyah, and Toba Tek Singh districts of Punjab province. Due to travel restrictions, a telephonic survey was conducted, and data were collected through a semi-structured interview schedule. The instrument contained both open and closed-ended questions and Likert scale items. Results revealed that the vast majority of the smallholder farmers was highly aware of the coronavirus disease, and they had positive attitudes towards the government lockdown strategies. However, some farmers were also facing great challenges in access to farm inputs, unavailability of farm laborers, high prices, and selling their farm produce in the market due to lockdown, which resulted in a drop of their crop incomes and lower food consumption. There remains a dire need to support them in the current crisis and address their challenges.
17 pages, Traditionally, dietary choices are formed through socialization, social norms and the social environment, while news media seemed to have little impact on people’s diets. This article explores whether today’s news media consumption and in particular consuming and sharing information about food on social media are associated with following a vegetarian or vegan diet. The data come from a tailor-made survey carried out in Hamburg, Germany, in 2018 (N = 1,214). Making use of probit regression with multiple equations, we analyse the associations between vegetarianism and individual news consumption, having vegetarians in the social environment, and communicating about food, controlling for individual and family characteristics. We find that both regular news consumption via social media and having vegetarian friends or family members is associated with pursuing a vegetarian diet. Moreover, news consumption via social media comes with increased communication about food, suggesting high relevance of social media for pursuing a vegetarian diet.

Communicating about antimicrobial resistance (AMR) and antimicrobial stewardship (AMS) requires technical knowledge, consideration of audience values and appropriate identification of communication strategies for multiple audiences. Within the context of animal agriculture, communicating about AMR represents an important and complex endeavour for veterinarians, governmental agencies, producers and the industry to convey policy and practice information regarding the use of antimicrobials in food animals.
Objectives
To assess the science communication challenges related to AMR by identifying the motivations, goals and struggles of animal agriculture stakeholders when communicating about AMR and AMS.
Methods
Participants attending a meeting on AMR communication in animal agriculture (N = 80) completed a workshop on science communication, including small group meetings with oral/written comments collected. Participants included veterinarians, government agency representatives, industry stakeholders and producers.
Results
Results indicated participants believed providing more accurate information would resolve misunderstanding and concern about AMR to other stakeholders, counter to recommendations of science communicators. Other participants noted beliefs about the utility of stories in trying to explain how AMS is normative and consistent with the values of all parties interested in animal agriculture. Participants noted the importance of public engagement, even if the participants’ perceived target audiences did not include the public.
Conclusions
Communicating about AMR and AMS in animal agriculture contexts provide unique challenges. Few evidence-based recommendations are available for science communicators in these contexts and more research is needed to improve the quality of communication about AMR and AMS in animal agriculture.
13 pages, An increasing number of small and medium-sized enterprises (SMEs) in the German organic agri-food sector involves citizens through different community financing models. While such models provide alternative funding sources as well as marketing opportunities to SMEs, they allow private investors to combine their financial and ethical concerns by directly supporting the development of a more sustainable food system. Due to the low level of financial intermediation, community financing is characterized by close relations between investors and investees. Against this background, we apply the proximity concept from economic geography to explore spatial and relational aspects of community financing in the German organic agri-food sector. Based on a qualitative multiple case study approach, we find that the relevance of proximity is twofold. While different forms of proximity between SMEs and their potential investors are key success factors, proximity is also considered as one desired outcome of community financing. Furthermore, our results reveal that the extent to which SMEs rely on particular proximity dimensions distinguishes two different approaches to community financing.
1 page, abstract only, Food law, including traditional food safety regulation, antihunger programs, and food system worker protections, has received increased attention in recent years as a distinct field of study. Bringing together these disparate areas of law under a single lens provides an opportunity to understand the role of law in shaping what we eat (what food is produced and where it is distributed), how much we eat, and how we think about food. The food system is rife with problems— endemic hunger, worker exploitation, massive environmental externalities, and diet-related disease. Looked at in a piecemeal fashion, elements of food law appear responsive to these problems. Looked at as a whole, however, food law appears instead to entrench the existing structures of power that generate these problems.
This Article offers a novel conceptual critique of the food system. It argues that food law is built on two contradictory myths: the myth of the helpless consumer who needs government protections from food producers and the myth of the responsible consumer who needs no government protection and can take on the food system’s many problems herself. The first myth is self-actualizing, as the laws that it justifies disempower food consumers and producers. The second myth is self-defeating, as the legal structures that assume consumer responsibility impede meaningful consumer choice.
Food law, as it is shaped by these myths, constructs powerlessness by homogenizing— or erasing diversity within—the food system, paralyzing consumers through information control, and polarizing various food system constituents who might otherwise collaborate on reform. Ultimately, food law is designed to thwart food sovereignty. By revealing how the structures of food law itself obstruct reform, this Article also identifies a path forward toward true food sovereignty.
17 pages, Short food supply chains have become the focus of considerable research in the last two decades. However, studies so far remain highly localized, and claims about the economic and social advantages of such channels for farmers are not backed by large-scale empirical evidence. Using a web survey of 613 direct-market farmers across Canada, this article explores the potential economic and social benefits that farmers derive from participating in short food supply chains. We used multivariate analysis to test whether a farmer’s degree of involvement in direct food channels is positively correlated with levels of work enjoyment, social satisfaction, and economic satisfaction. The results indicate that, overall, direct-market farmers report high levels of occupational satisfaction, although work-related challenges persist, such as stress, excessive workloads, and competition. Farmer participation in short food chains was also a positive predictor of work enjoyment and economic satisfaction, but not of social satisfaction, as measured by the share of total farm sales attributable to direct selling. Net annual farm revenue, the share of direct food sales involving a middleman, age, and gender also correlated with one or more dimensions of occupational satisfaction.

The attention paid by institutions to food safety and quality encourages innovative solutions. The aim of this paper is to present the attitudes of farmers to implement eco-innovative solutions such as organic farming and agri-environmental practices. A survey was conducted among 64 organic farmers dealing with perennial crops, pastures, and beekeeping in Bulgaria. The data from the survey was used to build logistic regression to analyze the factors affecting the decisions to implement eco-innovative solutions. The results reveal that three most important factors affect willingness to adopt eco-innovations are: positive perception of the impact of eco-innovation on environment quality, positive change in income as a result of organic farming, and adequate state policy and regulation of the agricultural sector.
17 pages, US farmers market managers must be strategic in deciding which vendors sell at their markets. They would benefit from understanding how market characteristics impact vendor sales, although the few studies that have explored this topic have found inconclusive results. We use a unique panel database of sales at 13 farmers markets to estimate how vendors' sales are influenced by the characteristics of their farmers market. We find that average sales at weekend farmers markets becomes increasingly large as farmers markets increase in size. At weekday markets, average sales increase as small markets add vendors but eventually decline as markets become larger. These results could occur if weekend markets attract shoppers from increasingly greater distances as they become larger, while average sales eventually decline as weekday markets increase in size due to vendor competition. Produce vendors experience higher average sales at weekend markets than weekday markets and experience a relatively small increase in sales as market size increases. Vendors of hot prepared foods experience higher sales at weekday markets [EconLit Citations: Q10, Q12, Q13].
33 pages, This study surveyed 258 organic grain farmers in Iowa in the U.S. Midwest. We identified seven areas of challenges related to organic grain farming adoption: organic farming operations, marketing, policy, finance, inputs and information, social pressures, and land tenure. Respondents reported three key areas where extension programs were needed: education, research, and technical services. Regarding outreach formats, organic farmers preferred events where peers were featured or provided leadership, such as field days, one-on-one mentor programs, and farmer-to-farmer workshops. Results provided empirical evidence to support theoretical discussions and policy implications on issues related to adoption of organic grain farming.
17 pages, U.S. agriculture is both a major source of global food and a key contributor to multiple interconnected crises. Climate change, biodiversity loss, and severe impacts on soil and water quality are among the challenges caused by U.S. industrial agriculture. Regenerative methods of farming are necessary to confront all these challenges simultaneously, in addition to addressing the increasing challenges to farm labor conditions. Transforming U.S. agriculture to a regenerative system will require a focus on creating traction for the values, beliefs, worldviews, and paradigms that effectively support such transformation while decreasing the friction that works against them. With a focus on creating traction for transformation, we review the factors and processes that tend to promote and maintain ecological improvements on farms. Starting from a case study that points to some of the sources of friction and traction in the current U.S. agricultural system, we use the framework of three spheres of transformation to focus discussion on how processes that form beliefs and values shape and can reshape farming. We develop a series of points of entry for engaging the systemic changes that will offer farmers traction for transformation. We review literature on agricultural networks, polycentric governance, social learning, agricultural education, and farmer characteristics that lend themselves to ecologically mindful change, thereby identifying interventions that tend to provide traction for change. These approaches, and the supports that allow rural communities and the people that work in them to survive and thrive, are necessary to create the traction needed for farms to undergo a shift to regenerative agricultural practices. We link these changes to the promise of the twentieth century New Deal agricultural programs and the potential of the Green New Deal.
10 pages, Sustainable food systems are often defined by greenhouse gases, land use, effects on biodiversity, and water use. However, this approach does not recognize the reason food is produced—the provision of nutrients. Recently, the relationship between diets and sustainability has been recognized. Most accepted models of ‘sustainable diets’ focus on four domains: public health, the environment, food affordability, and cultural relevance. Aligned with the FAO’s perspective, truly sustainable diets comprise foods that are affordable, nutritious, developed with ingredients produced in an environmentally friendly manner, and consumer preferred. Identifying solutions to address all four domains simultaneously remains a challenge. Furthermore, the recent pandemic exposed the fragility of the food supply when food accessibility and affordability became primary concerns. There have been increasing calls for more nutrient-dense and sustainable foods, but scant recognition of the consumer’s role in adopting and integrating these foods into their diet. Dietary recommendations promoting sustainable themes often overlook how and why people eat what they do. Taste, cost, and health motivate consumer food purchase and the food system must address those considerations. Sustainable foods are perceived to be expensive, thus marginalizing acceptance by the people, which is needed for broad adoption into diets for impactful change. Transformational change is needed in food systems and supply chains to address the complex issues related to sustainability, taste, and cost. An emerging movement called regenerative agriculture (a holistic, nature-based approach to farming) provides a pathway to delivering sustainable foods at an affordable cost to consumers. A broad coalition among academia, government, and the food industry can help to ensure that the food supply concurrently prioritizes sustainability and nutrient density in the framework of consumer-preferred foods. The coalition can also help to ensure sustainable diets are broadly adopted by consumers. This commentary will focus on the challenges and opportunities for the food industry and partners to deliver a sustainable supply of nutrient-dense foods while meeting consumer expectations.

In order to help consumers to make healthy food choices, many European countries have developed proposals for “front-of-pack” food labeling, intended as an integration to the nutritional information provided by the mandatory nutritional declaration. Based on the European strategic program “Farm to Fork”, the intention is to achieve a harmonized front-of-pack label proposal by Q4 2022.
Among the different proposals, the one which received most attention by experts and greater feedback by the EU member countries is the Nutri-Score, a tool based on an algorithm whereby a “quality” category ranging from A to E is assigned to each single food on a background colored from dark green to dark orange. As an alternative to Nutri-Score, the NutrInform Battery has been developed by Italy in association with a few other EU member states: this proposal is objectively alternative to the Nutri-Score proposal due to a different underlying philosophy, in particular for its informative and educational intent rather than purchase orientation.

6 pages, Kefirs are fermented beverages containing yeast and bacteria produced by the fermentation of water or milk with kefir grains. Because microorganism density may influence a product's health benefits, label accuracy regarding viable bacterial density and taxonomy of fermented foods is important. In this study, the microbiota of 5 commercial kefir products were measured quantitatively using standard plating techniques and characterized using high-resolution, long-read 16S rRNA gene amplicon sequencing. To enumerate viable lactic acid bacteria, 2 lots of each product were plated on de Man, Rogosa and Sharpe agar upon opening and following 14 d and incubated under anaerobic and aerobic conditions. Results revealed that 66% of products with a guaranteed count of colony-forming units per gram overstated microorganism density by at least 1 log, with only product E exceeding 1 × 109 cfu/g. Sequencing results demonstrated moderate product label accuracy in regard to taxonomy, yet several products contained bacterial species above the minimum detectable threshold (0.001% relative abundance) that were not included on the labels (e.g., Streptococcus salivarius, Lactobacillus paracasei). Our results demonstrate a moderate level of labeling accuracy for commercial kefir products intended for human consumption. Regulatory agencies and consumers must continue to scrutinize these products and demand a higher level of accuracy and quality.
20 pages, Food consumers are increasingly searching for emotions and values when purchasing and consuming food. They search for products that ensure social and environmental sustainability, in addition to more common extrinsic product attributes, such as price, packaging, origin, and brand. In particular, there is increasing interest in product price fairness. The current study aims at exploring consumers’ perception and understanding of price fairness, focusing on the processed tomato products agro-food chain. The study interviewed 832 people. Data were collected through an online questionnaire with the support of Qualtrics software, and data elaboration was carried out with Statistical Package for Social Science (SPSS). The elaboration includes an Exploratory Factor Analysis (EFA) to identify existing latent factors in the consumers’ perception of enabling agro-food system elements influencing farmers’ reception of fair prices. Then, factor mean values were cross-analysed with socio-economic characteristics and processed tomato consumption habits with Analysis of Variance (ANOVA). Results support the idea that consumers are limitedly aware of the processed tomato agro-food chain dynamics and consider farmers as the most unfairly remunerated partner. Women and frequently purchasing consumers of processed tomato products believe farmers should be treated more fairly. There is a difference between what consumers perceive as fair price distribution and actual price distribution among processed tomato chain actors. Further studies may focus on how fairness attribute impacts on consumer purchasing behaviour.
