Via UI online subscription., The foodservice industry generates food waste by disposing of unserved food in the kitchen as well as uneaten food from consumers’ plates. In all-you-care-to-eat dining settings, such as university dining halls or buffet-style restaurants, food waste can be problematic because there is little monetary incentive to take less food. In addition, university dining facilities primarily serve young consumers who tend to be more wasteful than the average adult, further increasing the likelihood of waste. Appeals to money-saving have generally been identified as the best motivator to reduce consumer food waste; however, alternative motivators are needed when the quantity of food and its associated cost are not directly linked in all-you-care-to-eat settings. The purpose of this study is to determine the efficacy of a food waste reduction campaign in a university dining hall. Consumer plate waste was collected, sorted, and weighed in a treatment and comparison dining hall for a semester to assess the impact of the campaign on the quantity and type of food waste. Results reveal that the campaign had a modest, though insignificant, impact on waste behavior, but there were changes in students’ beliefs related to food waste, which may be an important first step to achieving behavioral change.

12 pages, via Online Journal, Current, prevalent models of the food system, including complex-adaptive systems theories and commodity-as-relation thinking, have usefully analyzed the food system in terms of its elements and relationships, confronting persistent questions about a system’s identity and leverage points for change. Here, inspired by Heldke’s (Monist 101:247–260, 2018) analysis, we argue for another approach to the “system-ness” of food that carries those key questions forward. Drawing on Niklas Luhmann’s systems theory, we propose a model of the food system defined by the relational process of feeding itself; that is, the food system is made of feeding and only feeding, and system structures are produced by the coupling of that process to its various contexts. We argue that this approach moves us away from understandings of the food system that take structures and relations as given, and sees them instead as contingent, thereby helping to identify leverage points for food system change. The new approach we describe also prompts us as critical agrifood scholars to be constantly reflexive about how our analyses are shaped by our own assumptions and subjectivities.

15 pages., Many U.S. state governments have programs that promote the food grown or made within their state. In this study, the websites of 41 such programs were analyzed for indicators of stewardship, a framework concerned with relationship cultivation. Several of the indicators were observed commonly, demonstrating a generally balanced use of stewardship strategies by the programs. The websites also provided a platform to grow relationships between producers and consumers. One recommendation for managers of statewide food promotion programs, or similar umbrella food brand programs, is to examine their own websites to ensure indicators of all stewardship strategies are present. Though most websites examined in this study posted mission statements, for example, not all of them did. Expressions of gratitude to multiple stakeholder groups were also lacking on many of the websites. Another recommendation for managers is to implement some of the more creative ways programs have practiced stewardship such as giving audiences opportunities to co-create content. Overall, this analysis showed that state-run food promotion programs function as public relations and agricultural communications tools.
