- 13 pages, In Ghana, groundwater, accessed through wells and boreholes, is generally unregulated and may be contaminated with pollutants including excess nitrates from agricultural chemical fertilizers. Yet, studies estimating how clean groundwater is valued are not available in Ghana. In addition, some research suggests that the pre-experiment information provided to survey respondents affects their valuation of an identical outcome. This paper estimates smallholder farmers’ preferences for groundwater protection using pre-experiment information focused on one of two outcomes: environment or health. The double-bounded contingent valuation (DBCV) approach is used to estimate willingness to pay (WTP) to protect groundwater quality. The estimation accounts for shift and anchoring effects, which are common issues with the DBCV method. The mean WTP from the health (environmental) information subsample is about US$19 (US$17) per acre, and the values are significantly different between the information conditions. The findings shed light on the importance of using precise information in eliciting WTP in a developing country setting.

- 12 pages, Knowledge of how different management strategies affect gas production from livestock buildings can be helpful for emission predicting purposes and for defining mitigation strategies. The objective of this study was to statistically assess whether and how measured concentrations of ammonia (NH3), methane (CH4) and carbon dioxide (CO2) were influenced by milking frequency. Concentrations of gases were measured continuously by using infrared photoacoustic spectroscopy in the breeding environment of an open dairy barn located in Sicily in hot climate conditions. Data were acquired by specific in-field experiments carried out in 2016 and 2018, when milking sessions occurred twice a day (2MSs) and three times a day (3MSs), respectively. The number of the milking cows was 64 in both 2MSs and 3MSs. The results showed that concentrations of NH3, CH4 and CO2 were statistically influenced by the number of milking sessions. From 2MSs to 3MSs, NH3 concentrations were enhanced (p < 0.001) due to the higher cow’s activity. Conversely, gas concentrations of CH4 and CO2 were lower for 3MSs compared to those for 2MSs due to the effect of the different feeding frequency. Overall, the milking frequency influenced barn management and cow behaviour by modifying the level of gas concentrations in the barn environment.

- 22 pages, Many stated preference studies have shown that individuals’ attitudes play an important role in explaining their behaviour and helping to disentangle preference heterogeneity. When responses to attitudinal questions are introduced into discrete choice models, a suitable approach that corrects for potential endogeneity must be adopted. We use a discrete choice experiment to analyse the preferences of residents regarding the use of agri-environmental practices in the peri-urban area of Milan (Italy). A detailed analysis of these preferences is relevant for policymakers as farmers on the peri-urban fringe are often asked to provide environmental services to urban-dwellers. We apply a latent class model that we extend to include indicators of individuals’ attitudes towards the relationship between agriculture and the environment. Besides the application of the control function approach to deal with endogeneity, our main contribution is the use of a refutability test to check the exogeneity of the instruments in the agri-environmental setting. Our results show that attitudinal indicators help to disentangle the preference heterogeneity and that the respondents’ willingness-to-pay distribution differs according to the indicators’ values.

Labels are useful tools for clearly providing such attribute information to consumers. The aim of this study was to evaluate how human values influence consumer segments for beef with information on animal welfare and environmentally friendly production. Using a choice experiment, we examined whether animal welfare and environmentally friendly labels, country of origin and price impact consumer choice. As results, five heterogeneous consumer classes were identified using a latent class model: label conscious, domestic beef preferring, price conscious, animal welfare preferring and not interested in production method. Almost 90% of consumers were interested in and willing to pay for beef with animal welfare or environmentally friendly label. The classes with significant preferences for such labeled beef were affected by “openness to change”, “self-enhancement” and “security”. Improving consumer attitudes and strengthening consumer perception towards labeled beef by marketers and policy makers will be required.

- 7 pages, Many current food systems are unsustainable because they cause significant resource depletion and unacceptable environmental impacts. This problem is so severe, it can be argued that the food eaten today is equivalent to a fossil resource. The transition to sustainable food systems will require many changes but of particular importance will be the harnessing of internet technology, in the form of an ‘Internet of Food’, which offers the chance to use global resources more efficiently, to stimulate rural livelihoods, to develop systems for resilience and to facilitate responsible governance by means of computation, communication, education and trade without limits of knowledge and access. A brief analysis of the evidence of resource depletion and environmental impact associated with food production and an outline of the limitations of tools like life cycle assessment, which are used to quantify the impact of food products, indicates that the ability to combine data across the whole system from farm to human will be required in order to design sustainable food systems. Developing an Internet of Food, as a precompetitive platform on which business models can be built, much like the internet as we currently know it, will require agreed vocabularies and ontologies to be able to reason and compute across the vast amounts of data that are becoming available. The ability to compute over large amounts of data will change the way the food system is analysed and understood and will permit a transition to sustainable food systems.

Samples of consumers in Germany and Poland selected the two–for them–most important out of a list of ten production characteristics, relating to animal welfare, health and safety, and environmental issues. In a subsequent choice experiment, the relative weight these characteristics had in consumers' choices was estimated. Relative importance of production characteristics varied between consumer segments, with the production interested segment being bigger in Germany than in Poland. With of one animal welfare related criterion in Germany, those production characteristics that consumers perceive as most important relate to health and safety aspects rather than to animal welfare and environmental impact.
