11 pages, Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.
7 pages, Pecans are a heart-healthy food, serving as an excellent source of unsaturated fatty acids, micronutrients, and phytochemicals. Despite rapid growth of the U.S. pecan export in global market, domestic pecan consumption has been stagnating, especially in attracting young consumers. This study seeks to investigate the effectiveness of nutrition education brochure that utilizes two information formats-rich media and traditional media-for promoting nutritional knowledge of pecans among young consumers. The experiment followed a between-subjects 2 x 2 design. Four versions of digital brochures were developed to manipulate two independent variables: video (absent vs. present) and recipe (absent vs. present). The findings indicated that including a video in the digital brochure can help increase consumers’ perceived information quality, and recipe content can help increase consumers' trust in the nutrition information and information source. The results also showed that for consumers with a lower prior knowledge regarding pecans, educational materials including a video were more effective than materials without a video. Such strategies to promote pecan consumption could benefit the pecan industry as well as public health.

22 pages., This study assessed the accessibility to nutrition education sources and level of knowledge on soya bean products as alternative/cheap source of protein by rural women. Multistage sampling procedure was utilized in selecting 234 respondents in the study area. Interview schedule and focus group discussion was used to collect information from the rural women. Data was analysed through descriptive statistics (percentages, frequencies and means) and inferential statistics (Analysis of variance). The results showed that the women had access to nutrition education on soya beans mostly through; family and friends (x̅= 0.82), local health centres (x̅= 0.78), radio (x̅= 0.80) and television (x̅= 0.71) programmes. The women had overall ‘below average’ knowledge on the products. There was no significant difference in the knowledge scores of the women across the three products (soya milk, iru and cake) (F= 0.167, p≥ 0.05). The result of the bivariate analysis indicated that local health centres (P = 0.035) and Women in Agriculture (P = 0.019) were nutrition education sources whose accessibility had a significant relationship with the level of soya bean product knowledge of the rural women. There is an urgent need for an aggressive campaign on the soya product nutrition education programme in order to increase the knowledge of this important and cheap protein source.

Via online. 27 pages., Global challenges such as climate change, increasing urbanization and a lack of transparency of food chains, have led to the development of innovative urban food production approaches, such as rooftop greenhouses, vertical farms, indoor farms, aquaponics as well as production sites for edible insects or micro-algae. Those approaches are still at an early stage of development and partly unknown among the public. The aim of our study was to identify the perception of sustainability, social acceptability and ethical aspects of these new approaches and products in urban food production. We conducted 19 qualitative expert interviews and applied qualitative content analysis. Our results revealed that major perceived benefits are educational effects, revaluation of city districts, efficient resource use, exploitation of new protein sources or strengthening of local economies. Major perceived conflicts concern negative side-effects, legal constraints or high investment costs. The extracted acceptance factors deal significantly with the “unknown”. A lack of understanding of the new approaches, uncertainty about their benefits, concerns about health risks, a lack of familiarity with the food products, and ethical doubts about animal welfare represent possible barriers. We conclude that adaptation of the unsuitable regulatory framework, which discourages investors, is an important first step to foster dissemination of the urban food production approaches.

24 pages., We analyse how agricultural extension can be made more effective in terms of increasing farmers’ adoption of pro-nutrition technologies, such as biofortified crops. In a randomised controlled trial with farmers in Kenya, we implemented several extension treatments and evaluated their effects on the adoption of beans biofortified with iron and zinc. Difference-in-difference estimates show that intensive agricultural training can increase technology adoption considerably. Additional nutrition training helps farmers to better appreciate the technology’s nutritional benefits and thus further increases adoption. This study is among the first to analyse how improved extension designs can help to make smallholder farming more nutrition-sensitive
Article first online: 18 July 2017, Via online journal., Farm to school programs have been positioned as interventions that can support goals of the global food sovereignty movement, including strengthening local food production systems, improving food access and food justice for urban populations, and reducing distancing between producers and consumers. However, there has been little assessment of how and to what extent farm to school programs can actually function as a mechanism leading to the achievement of food sovereignty. As implemented in North America, farm to school programs encompass activities not only related to school food procurement, but also to the development of student knowledge and skills under the framework of food literacy. Research on farm to school initiatives has largely been conducted in countries with government-supported national school feeding programs; this study examines farm to school organizing in Canada, where there is no national student nutrition program. Using qualitative fieldwork and document analysis, we investigate the farm to school movement in British Columbia, in a context where civil society concerns related to education and health have been the main vectors of farm to school mobilization. Our analysis suggests that, despite limited institutional infrastructure for school meals, the British Columbia farm to school movement has contributed toward realizing goals of food sovereignty through two main mechanisms: advocacy for institutional procurement of local and sustainable foods and mobilizing food literacy for increased public engagement with issues of social justice and equity in food systems.
