2. Assessment of food safety aspects and socioeconomic status among street food vendors in Lucknow city

- 8 pages, Street foods play an important role in the lives of urban population members in developing countries. The food industry provides many job opportunities. The food safety knowledge, attitude, and practices of vendors are important aspects, as these individuals provide food and nourishment at very low prices to people all over the world. Most street foods are unhealthy because of the high risk of contamination, which poses a serious threat to food safety. The present study aimed to assess the food safety knowledge, attitudes and practices of vendors and the most significant influencing factors of these aspects with the help of cluster analysis to categorize vendors. The present study focused on 100 vendors who were randomly selected from different locations in Lucknow city. The information was collected through a structured questionnaire using the KAP (Knowledge Attitude Practice) scale for food safety. Vendors were clustered on the basis of the KAP using two-step cluster analysis and a chi -square test to assess the impact of various personal factors on the KAP. The results of the study indicated that street vendors are significantly differentiated on the basis of qualifications, knowledge, attitude and practices. Awareness and training programs should be implemented to improve the food safety knowledge, attitudes and practices among vendors. Once food safety standards are acceptable, it will then be critical to ensure that poor people in developed cities such as Lucknow can earn a living through a "convenient" enterprise such as street food vending.

- 25 pages, Decreasing the consumption of meat and dairy has been identified as an effective strategy for protecting the health of humans and the planet. More specifically, transitioning to diets that are lower in animal-source foods and higher in fruits, vegetables, legumes, and whole grains offers a promising opportunity to better align consumer behaviors with contemporary nutritional and ecological goals. However, given the limited understanding of how these changes in dietary behaviors can be best promoted, there is a need to explore the merits of community-based approaches to meat reduction and their capacity to advance more sustainable practices of eating at the individual, household, and community levels. To address this gap in the literature, we surveyed more than 100 American households participating in a communitywide, 12-week-long Meatless Monday challenge and tracked the changes in their knowledge, attitudes, beliefs, and food choices over a nine-month period. The case study provided herein highlights a number of key findings from our evaluation. Most notably, our results demonstrate the value of community-based efforts in initiating and maintaining dietary behavior change and provide preliminary insights into the unique roles of multilevel interventions and diverse stakeholder engagement in promoting healthier, more sustainable diets.

Yet food sovereignty, like democracy, exists on multiple and competing scales, and policymakers and citizens often have different agendas and priorities. In passing a ban on the use of genetically-modified (GMO) seeds in agriculture, Jackson County, Oregon has obtained some measure of food sovereignty. Between 2016 and 2017 ethnographic research was undertaken in rural Southern Oregon where local community and State of Oregon priorities regarding the use of GMO crops are in conflict. This article presents ethnographic research findings about the expression and negotiation of multiple food sovereignties by civil society in rural southern Oregon and the State of Oregon via democratic processes. In particular, these findings illustrate the effects of socio-political power dynamics on local and state acts of food sovereignty, democracy and agrifood policy by analyzing what the different expressions of food sovereignty reveal for its implementation at the local level.

- 10 pages, Biotechnology use in food production has been a polarizing topic that has encountered resistance from some consumers. The discovery of genome editing biotechnology, in which no foreign genetic material is introduced into the host organism while making accurate and efficient changes in genomes, has the potential to revolutionize food biotechnology in a more socially acceptable and less polarizing fashion. The success and adoption of gene-edited foods, however, ultimately depends on consumer acceptance. This study reports the results of a geographically disperse Chinese consumer acceptance study (n = 835) in which individuals evaluated rice and pork products that were bio-engineered to address two significant hazards that have recently garnered international attention: cadmium contamination in rice and African swine fever. We explore the role that food technology neophobia has on consumer acceptance and assess how information on the differences between transgenic and gene editing technologies affects consumer preferences. While averse to the use of biotechnology in food products, consumers were considerably more accepting of products that have undergone genome editing rather than transgenic modification. We find differential impacts of information provision on preferences between pork and rice products and on preferences for product provenance. Our analysis indicates that a reduction in consumers’ fear of novel food technologies can substantially increase consumer valuation and market acceptance of bioengineered food products and reinforces the need to consider attitudes in measuring acceptance of novel food products.

- 20 pages., Via online journal., Consumers are concerned about the risks related to genetically modified (GM) food, and there is a need for agricultural communicators and educators to address those concerns. The purpose of this study was to explore Florida residents’ latitudes of acceptance, rejection, and noncommitment toward GM food messages. The findings from this study can be used to guide communication and education campaigns for GM food. An online survey was distributed to a non-probability sample of 500 Florida residents to fulfill the purpose of the study. The messages that most aligned with the respondents’ views toward GM food discussed how potential risks related to human health had not been adequately investigated and that GM food may be riskier to consume compared to traditional food. The messages that most opposed the respondents’ views were that GM food was safe for consumption and that it caused cancer in humans. People whose views most aligned with the message that GM food caused cancer in humans had the largest latitude of rejection, likely due to their extreme attitude, confirmation bias, and ego-involvement. The largest percentage of respondents accepted messages that aligned with their position but expressed noncommitment to messages that opposed their views. This lack of rejection and indication of alignment with messages related to potential risk and uncertainty indicated Florida consumers were unsure about the effects of GM food. Communicators and educators should acknowledge these concerns when delivering information about GM food to enhance the effectiveness of communication with consumers.

- 17 pages., Via online journal., Food waste has emerged as a major issue in the United States as the nation collectively sends more than 133 billion pounds of food to its landfills every year. In September 2015, the USDA and EPA announced an initiative to cut U.S. food waste in half by 2030. Between 2015 and 2016, nearly 100,000 posts about food waste have been published on Twitter, a microblogging platform that has been a hub of “slacktivism” since its inception in 2006. Using a conceptual framework of social cognitive theory, online activism, and crowdsourcing, we analyzed food waste conversation participants’ demographics, online communities, and proposed solutions. Data analysis was conducted with listening software Sysomos MAP and a qualitative content analysis of conversation content. The analysis revealed that more than 2,000 U.S. users engaged in the conversation, forming four discrete conversation communities led by influencers from government, news media, and environmental organizations. Proposed solutions to the food waste crisis included domestic or household behavior change, food-waste diversion and donation, recycling and upcycling, consumer education, and governmental action and policy. We recommend using Twitter to mine, test, and deploy solutions for combating food waste; engage with influential users; and disseminate materials for further research into the behavioral implications of online activism related to food waste.
10. Eliciting consumer preference and willingness to pay for mushrooms: a latent class approach

- 16 pages., As consumer demand for food labeling becomes increasingly important, producers and retailers can include various labeling to attract new customers. This study investigates Connecticut consumers’ preferences and willingness to pay for mushrooms marketed with various labels using a latent class approach to identify classes within the market. Results reveal three market segments (price/GMO-label, locally/organically grown, and traditional mushroom varieties). Overall, only a third of consumers valued the “locally grown” or “organic” labels, so charging a premium for these labels might alienate a majority of consumers. Finally, GMO labeled mushrooms are discounted, but the non-GMO label receives little value.
