26 pages, This research is intended to initiate understanding of how obesity in the South persists even though the majority of inhabitants subscribe to a faith that discourages unhealthy lifestyles. Grounded in the Cognitive Dissonance Theory, this study examined Protestant evangelical Christians in the South (N = 11), who participated in semi-structured interviews. The first emergent theme was that, to these Southerners, the purpose of food is for sustenance and survival, as well as for bringing people together. Most participants reported having an average level of knowledge of nutrition and health. Furthermore, participants generally agreed that marketing or educational efforts had little effect on their understanding of nutrition. Another theme emerged when participants provided Biblical references to food or health. “The Body is a Temple” and “gluttony” were the most common Biblical concepts. All participants referred to taste or desirability as the driver of their food selections. Furthermore, most participants claimed habitual gluttony as a personal experience in their lives. This study concluded that subjects employed two modes of “trivializing” as a way of resolving dissonance. Some participants justified their eating habits based on Southern culture, while others explained that their church culture supported unhealthy eating as a means of gathering in fellowship.
22 pages, The objective of this study was to provide a comprehensive overview of the recent advancements in the use of deep learning (DL) in the agricultural sector. The author conducted a review of studies published between 2016 and 2022 to highlight the various applications of DL in agriculture, which include counting fruits, managing water, crop management, soil management, weed detection, seed classification, yield prediction, disease detection, and harvesting. The author found that DL’s ability to learn from large datasets has great promise for the transformation of the agriculture industry, but there are challenges, such as the difficulty of compiling datasets, the cost of computational power, and the shortage of DL experts. The author aimed to address these challenges by presenting his survey as a resource for future research and development regarding the use of DL in agriculture.
11 pages, Extension is well-positioned to facilitate communication strategies that foster community resilience and disaster recovery, particularly for rural residents. This paper proposes a new approach to post-disaster communication that strengthens rural community capacities in locally and culturally relevant ways. The findings revealed specific post-disaster information needs, preferences for local resources, and communication that encourages resilience through a document analysis and interviews with informants recovering from the 2020 Colorado wildfires. The practical recommendations discussed serve as a starting point for Extension professionals in other areas to consider ways to engage with their communities before, during, and after a disaster.

16 pages, Producing sufficient food to satisfy nutritional needs is imperative for building a prosperous society. This study examined trends in agricultural yields, water and sanitation services, and nutrition indices in Nigeria. Secondary data from the FAO-FAOSTAT (2000–2020) were utilized and analyzed using descriptive statistics, the respective coefficients of variation and determination, the Mann-Kendall trend test, the Pearson correlation and multivariate regression for statistical inferences. The results show trends for data on several variables. GDP per capita and population numbers were positively correlated with the number of children under five years of age who were stunted, and the proportion of population and number of people using safely managed and at least basic drinking water and sanitation services. A major result was the significant positive relationship between cassava yield and number of children under five who were stunted. Also, there was the negative influence of population numbers on cassava and maize yields. If not attended to, the outcomes of these relationships are expected to exacerbate nutrition insecurity and stunting in children under five. An improvement in the national indices on agricultural yields and nutrition security is imperative for the accelerated attainment by 2030 of the national nutrition security targets and the SDGs.
14 pages, University agricultural educators are challenged to employ innovative approaches to prepare undergraduates in agriculture and natural resources to address complex global problems while understanding interconnected systems. Undergraduates, current members of Generation Z (Gen Z), prefer environmental sustainability and innovation, but solutions for addressing these preferences in educational settings remain elusive. Exploring Gen Z’s environmental consumption values and how those values relate to their systems thinking tendencies may provide university educators with insights on how to best educate Gen Z students. The purpose of this study was to examine the association between Gen Z students’ green consumer values and systems thinking tendencies. Data were collected using a web-based survey instrument of 68 undergraduate students at the University of [state]. Findings revealed respondents somewhat agreed they had green consumer values and respondents often used systems thinking when seeking to make an improvement. A Spearman’s rank-order correlation coefficient indicated a positive, yet weak, association between systems thinking tendencies and green consumer values. The association necessitates further exploration. University agricultural educators should incorporate systems thinking educational tools into classrooms so Gen Z students can effectively engage in systems thinking when addressing complex agricultural issues, like sustainability. Additional implications for systems thinking teaching are explored.
8 pages, Food security is one of the priorities of every country in the World. However, different factors are making it difficult to meet global targets on food security. Some unprecedented shocks are encumbering food security at the global level. Various interventions have been applied toward food security and artificial intelligence is one of the modern methods that is being used in various stages of the food system. In this paper, the application of artificial intelligence in the whole food production ecosystem ranging from crop production, livestock production, harvesting/slaughtering, postharvest management, food processing, food distribution, food consumption and food waste management is assessed. The objective of this research is to assess the application of artificial intelligence systems in all the stages of food systems. A systematic review was conducted by analyzing 110 articles after the screening of 450 articles based on the inclusion and exclusion criteria. The results indicated that various artificial intelligence algorithms are being applied to all the stages of the food system from crop/livestock production up to food or agro-waste management.
18 pages, This study aimed to describe school-based agricultural education (SBAE) teachers' attitudes regarding inclusion, diversity, and equity (IDE) and prioritize the need for IDE-related professional development. A series of survey questions were used to describe the sample of SBAE teachers and their attitudes toward IDE and inclusive teaching practices. Most participants agreed that their programs should create an inclusive environment where all students can benefit from their program, have equal opportunities, and demographically mirror their school's student population. However, the profession remains split on whether there are problems with IDE and whether changes are needed. This response is likely the result of today's polarized culture. The Borich Needs Assessment Model was used to determine the perceived level of importance and ability of SBAE teachers regarding 11 professional development statements related to IDE. All professional development needs were assessed and ranked using mean weighted discrepancy scores (MWDS). The top three IDE-related professional development need areas among SBAE teachers were (a) tapping into students' lived experiences (cultural capital) when teaching, (b) identifying curriculum resources to enhance inclusivity, and (c) advocating for minority students.
