- 11 pages, Research suggests participating in youth hands-on cooking programs, like those offered by Extension and 4-H, can improve nutrition behaviors and reduce the risk for obesity. We surveyed [STATE] Extension professionals (n = 127) to explore factors (e.g., employee characteristics, resources, county demographics) related to offering youth hands-on cooking programs and curricula used. Over 2/3 of participants offer programs and reported creating their own curriculum. More years of experience, having received Extension Specialist training, and increased confidence were positively related to offering these programs. Results suggest training could increase confidence and program implementation and standard curricula may be needed.

- 10 pages, Extension faculty are tasked with developing and communicating educational programs to local clientele, and communication skills are a considerable piece of the Extension faculty job. Thus, UF/IFAS Extension included a communication portion to the on-board training for newly hired Extension faculty to develop their design skills so they can more effectively communicate through their educational and marketing materials. We used Rogers’ (2003) innovation-decision process to assess Florida early career Extension faculty’s adoption of design principles after completion of the 2019 UF/IFAS Extension Faculty Development Academy. Thirty-two Extension faculty completed the spring and fall sessions of the Academy. A mixed methods approach was utilized to gather survey data at the immediate completion of the Academy and qualitative, telephone interview data four to five months after completing the Academy. The faculty retrospectively perceived they increased their knowledge about design principles. They had an overwhelmingly positive attitude about learning design principles to better their communication efforts, but they decided not to fully adopt design principles in their work as other information and elements of learning their job took precedent.

- 8 pages, Street foods play an important role in the lives of urban population members in developing countries. The food industry provides many job opportunities. The food safety knowledge, attitude, and practices of vendors are important aspects, as these individuals provide food and nourishment at very low prices to people all over the world. Most street foods are unhealthy because of the high risk of contamination, which poses a serious threat to food safety. The present study aimed to assess the food safety knowledge, attitudes and practices of vendors and the most significant influencing factors of these aspects with the help of cluster analysis to categorize vendors. The present study focused on 100 vendors who were randomly selected from different locations in Lucknow city. The information was collected through a structured questionnaire using the KAP (Knowledge Attitude Practice) scale for food safety. Vendors were clustered on the basis of the KAP using two-step cluster analysis and a chi -square test to assess the impact of various personal factors on the KAP. The results of the study indicated that street vendors are significantly differentiated on the basis of qualifications, knowledge, attitude and practices. Awareness and training programs should be implemented to improve the food safety knowledge, attitudes and practices among vendors. Once food safety standards are acceptable, it will then be critical to ensure that poor people in developed cities such as Lucknow can earn a living through a "convenient" enterprise such as street food vending.

- 18 pages, The purpose of this study was to assess the knowledge level of farmers on basic computer literacy, social media use, and to explore which social and demographic factors affected their knowledge capacity. The study had a final sample of 176 participants from the northern, southern and central regions of Trinidad and Tobago. A survey instrument comprising of 14 multiple-choice questions with one accurate response was developed to decrease bias of farmers randomly selecting the accurate response. The questions addressed knowledge on basic computer and social media literacy. Analysis was conducted using one-way ANOVA with post-hoc testing. Results indicated that there were significant differences in farmers’ performance in the knowledge test based on characteristics such as age, education, and household use of social media and the internet. Based on the findings, minimal training in computer and social media literacy did not impede the farmers’ use of the computer or social media. These discoveries highlight the potential of extension programs using the internet and social media applications to improve communication efficiency among agricultural stakeholders within farming communities.

- 19 pages, The COVID-19 pandemic has drastically affected people's lives around the world, including agricultural extension workers. To date, few studies have been conducted to understand the adaptation of extension services in Latin American countries during the pandemic. This mixed-methods study explored Latin-American extension professionals’ preparation to implement knowledge-sharing activities and sought to understand extension professionals' responsiveness to COVID-19. The results revealed significant differences in extension responsiveness, between field extension workers and in-office extension workers. Delving into this difference revealed that field extension professionals perceived lower responsiveness because they were not able to continue their pre-pandemic, face-to-face activities in the field with farmers; on the other hand, office extension workers were able to complete and respond to their annual program objectives by increasing institutional partnerships by virtual means. Resilience was found in the two phases of this study. Extension professionals were viewed by farmers as a reliable resource for addressing COVID-19 challenges. Extension professionals began using new communications technologies to train farmers, even though they were not trained in these technologies themselves. It will be important to begin formally incorporating the use of new technology, and alternative communication strategies with communities during crises, as part of preparation for field technicians.

- 17 pages, British Columbia’s food system is experiencing an emerging trend in the digitalization of agriculture, which will impact agricultural practices in the province. The rapid growth of this field has created a niche for training and education in digital agriculture and more specifically, in areas such as robotics, artificial intelligence, big data analytics, and computing. However, it remains unclear whether current educators and trainers in British Columbia are communicating both the benefits and risks of digital agriculture, and the need for an inclusive and equitable approach to digital agriculture. To understand the emerging education and training landscape in digital agricultural technologies, this exploratory study engaged in a key informant interview with 12 participants, including educators, relevant government staff, and private training consultants/practitioners in the food and agricultural sector in British Columbia. The small sample is reflective of the nascent nature of this area of research, which seeks to better understand digital agriculture from the perspectives of agricultural educators and trainers both in the public and private sectors. The study found that there is currently a lack of consideration for equity and food sovereignty in digital agricultural training and education. This is primarily due to a gap in engagement with the social aspects of digital agriculture. Without engaging critical social scientists and critical data studies, digital agriculture education, and training may be conducted in ways that do not promote responsible and ethical innovation, and are therefore counterproductive to the development of a just and sustainable food system.
