University of Tasmania, 10 pages, At the same time as overweight and obesity have come to dominate population health priorities in most western countries, food programming takes up more time on western television screens than ever before. This has resulted both in increased televisual representations of so-called ‘unhealthy’ foods (such as butter, cream and fatty red meats), and in greater public health scrutiny of the preparation and consumption of such foods. This article explores this paradox via a case study of MasterChef Australia, the most successful iteration of the popular MasterChef franchise. At a time when the ‘obesity epidemic’ has been a particular focus of Australian public health promotion, MasterChef Australia revels in the apparently ‘excessive’ use of saturated fats, especially butter, a food routinely declared by Australian health advocacy bodies as one to be avoided. This article argues that MasterChef Australia offers an alternative to puritanical nutrition discourses – not, on the whole, by explicitly contesting them, but by presenting food in ways that such discourses are largely irrelevant. The public health concerns generated by this use of butter on MasterChef Australia offer important insight into current debates about food and health, and, in particular, into the limitations of current public health communication strategies.
12 pages, via online journal, This study aimed to investigate elementary school students’ needs and preferences regarding urban agriculture. In total, 1268 students in grades 4 to 6 at four elementary schools in Seoul, South Korea, participated in the study. A 21-item questionnaire was developed and distributed in each school by trained researchers for 3 weeks in Oct. 2017. More than 73.7% of the students reported having an awareness of and need for urban agriculture, and 86.8% (N = 1048) indicated their participation intention. Students noted needing urban agriculture for scientific inquiry and recommended including a learning activity in urban agriculture (35.4%, N = 400) for psychological stability and stress reduction (20.9%, N = 236), and for leisure and hobby purposes (16.2%, N = 183). Students reported participating in urban agriculture activities in indoor and outdoor spaces (33.8%, N = 423) for more than 30 minutes and less than 60 minutes (42.0%, N = 525) twice per week (40.2%, N = 501) with friends (72.9%, N = 818). Preferred urban agriculture indoor activities were planting plants (21.8%, N = 822), arranging flowers (20.9%, N = 788), and making craftwork using plants (18.9%, N = 714). Harvesting (20.8%, N = 790), watering (15.1%, N = 570), and planting transplants (13.1%, N = 493) were preferred outdoor activities. Other preferred activities included playing with livestock (22.4%, N = 884), cooking with the harvested crops (21.3%, N = 805), and feeding livestock (17.2%, N = 650). The female students demonstrated greater perception, experience, awareness of the necessity, and willingness to participate in urban agriculture compared with male students (P = 0.01). The lower the grade, the more students perceived the necessity of urban agriculture (P < 0.001). The results of this study can provide basic data for the practical development of urban agriculture programs for elementary school students.
8 pages., Via online journal., With growing interest in food system solutions to address poor health outcomes related to preventable chronic diseases, organizations and researchers are examining the value of community gardens as interventions to promote individual and community health. Research suggests that participation in community gardens improves access to fresh, healthy foods and increases fruit and vegetable consumption. In addition to these physical benefits, research also documents a variety of social and communal benefits, by expanding social capital, stabilizing neighborhoods, and cultivating relationships. Unfortunately, most of these studies focus on a specific case, cross case, or intervention studies within a geographically specific locale. Learning lessons from successful community garden programs can be difficult because community gardens often rely on the synergy of a complex network of support agencies that assist in various technical and educational capacities. The purpose of the study was to demonstrate the use of a framework for program development and evaluation that stakeholders, including extension, can adopt to show program outcomes. The framework used a Delphi approach with a diverse panel of community garden stakeholders to reach consensus about program outcomes. The study demonstrated that the panel could reach consensus on a variety of short-, medium-, and long-term outcomes.

In addition, 39% of elementary, 40% of middle, and 30% of high school students within the state are classified as overweight or obese. School garden-based learning (GBL) is a low-cost and high-impact initiative that addresses both poor academic performance and childhood obesity. This study examined how school-based gardens, as part of a pilot farm-to-school (FtS) initiative, are administered and used within academic and cafeteria meal programs. An online survey was developed and sent to 102 educators who previously completed an online training course entitled School Gardening for South Carolina Educators during the 2012–15 academic school years. Data were collected from 37 educators (36% response rate). Survey results indicate that the majority of these educators, although they completed the training course, were unaware that their garden was a component of an FtS program. Moreover, gardens were not integrated with school-wide programs, especially in the cafeteria: most gardens did not contribute food to the cafeteria and meals offered most often did not align with plants learned about in the gardens. Successes of the pilot program were that the majority of educators started and maintained their garden for over 1 year and they were able to use their gardens during the day for academic instruction in multiple disciplines, including math, science, and nutrition.
13 pages, via online journal, This study tested whether message tailoring of recipes and food-use tips for low-income households is superior to providing a generic version of the material. The field experiment was conducted in the busy conditions found at community food pantries, and included 10 food distributions at each of six sites. We analyzed the consumption of fresh vegetables 6 days following distributions, and retention of print materials 6 weeks later. Self-determination and reactance theories guided the development of tailoring in an indigenous fashion, allowing each pantry client to choose recipes and food tips thought personally useful. This contrasted against paternalistic tailoring, common in health communication, where a motivational theory is used to regulate the health messages given to recipients. Results demonstrated benefits of tailoring over both generic and control conditions and uncovered the degree of tailoring that produced the largest effects. As suggested by construal level theory, the intervention addressed recipients' immediate and concrete decisions about healthy eating, instead of distant or abstract goals like prevention of illnesses. We documented per-client costs of tailored information. Results also suggested that benefits from social capital at sites offering a health outreach may exceed the impact of message tailoring on outcomes of interest.
18 pages., via online journal., Genetically modified (GM) foods have attracted a great deal of controversy. While some consumers and organizations regard GM foods as safe, many other consumers and organizations remain concerned about their potential health risks. The results of three studies suggest that consumers respond differently to persuasive messages regarding GM foods on the basis of their preexisting attitudes. Weak anti-GM consumers tend to comply with a variety of pro-GM messages. In contrast, strong anti-GM consumers exhibit message-opposing behavior. Moreover, they respond just as negatively to a safety message (claiming that GM foods are safe) as to a risk message (claiming that GM foods are unsafe). The mechanism underlying these effects is consumers’ perceived health risk. A benefit message claiming that GM foods are beneficial (e.g., more nutritious than their conventional counterparts) is a better alternative for strong anti-GM consumers. Finally, the results suggest that persuasive messages do not significantly change pro-GM consumers’ evaluations of these foods.

Youths who have more frequent family meals often have more healthful dietary behaviors. However, little is known about the context and processes related to how family mealtimes affect youths' dietary behaviors. To address this gap, we examined the context of family mealtimes and parent socialization that occurs during family meals through mealtime observations and interviews. Family mealtimes are valued by parents, and our findings can be useful to Extension professionals in educating parents and families regarding shaping of family mealtimes, feeding strategies, and nutrition.

24 pages., via online journal., Biofortification of staple crops to combat micronutrient deficiencies is gaining global recognition. Projects promoting biofortified food crops use intensive agriculture-nutrition education and extension activities to increase adoption of such crops. This study examines the effect of such programs on the adoption and diffusion of orange-fleshed sweetpotato (OFSP). It finds that intensive agriculture-nutrition education and extension programs adopted by some of the biofortification projects increases the adoption and diffusion of OFSP. Specifically, participation in mother-to-mother nutrition support clubs and nutrition-focused health talks affect its adoption and diffusion, but with varying degrees of importance. The paper discusses the implications of these findings.

The aim of the Farm to School (F2S) program is to bring fresh, local produce into school cafeterias. Aligning with Extension goals, the F2S program provides an opportunity for both the development of healthful lifestyles and increases in agricultural profits. Through interviews with producers and school food service directors, we determined ways Extension programming can be used to improve the efficiency of the F2S program.

These traditional methods remain ideas that work, have worked, and continue to work even today. In this article, we spotlight these traditional ideas by presenting a social marketing campaign that engages limited-resource audiences via themed print educational materials—posters, brochures, and bookmarks. Evaluation results indicate that the campaign has been successful in engaging the target audience and motivating them regarding the adoption of healthful behavior changes.

Respondents "were challenged to accurately perceive silhouettes corresponding to an obese body mass index (BMI) in themselves and others. Misperception of weight status was more likely to exist among those with a BMI less than 18.5 - or 30 or more ("overweight" and "obese"). 7 pages., via online journal, To respond to the high prevalence of obesity and its associated health consequences, recent food research and policy have focused on neighborhood food environments, especially the links between health and retail mix, proximity of food outlets, and types of foods available. In addition, the social environment exerts important influences on food-related behaviors, through mechanisms like role-modeling, social support, and social norms. This study examined the social dynamics of residents' health-related food-shopping behaviors in 2010–11 in urban Philadelphia, where we conducted 25 semi-structured resident interviews—the foundation for this paper—in addition to 514 structured interviews and a food environment audit. In interviews, participants demonstrated adaptability and resourcefulness in their food shopping; they chose to shop at stores that met a range of social needs. Those needs ranged from practical financial considerations, to fundamental issues of safety, to mundane concerns about convenience, and juggling multiple work and family responsibilities. The majority of participants were highly motivated to adapt their shopping patterns to accommodate personal financial constraints. In addition, they selectively shopped at stores frequented by people who shared their race/ethnicity, income and education, and they sought stores where they had positive interactions with personnel and proprietors. In deciding where to shop in this urban context, participants adapted their routines to avoid unsafe places and the threat of violence. Participants also discussed the importance of convenient stores that allowed for easy parking, accommodation of physical disabilities or special needs, and integration of food shopping into other daily activities like meeting children at school. Food research and policies should explicitly attend to the social dynamics that influence food-shopping behavior. In our social relationships, interactions, and responsibilities, there are countless opportunities to influence—and also to improve—health.

25 pages, Decreasing the consumption of meat and dairy has been identified as an effective strategy for protecting the health of humans and the planet. More specifically, transitioning to diets that are lower in animal-source foods and higher in fruits, vegetables, legumes, and whole grains offers a promising opportunity to better align consumer behaviors with contemporary nutritional and ecological goals. However, given the limited understanding of how these changes in dietary behaviors can be best promoted, there is a need to explore the merits of community-based approaches to meat reduction and their capacity to advance more sustainable practices of eating at the individual, household, and community levels. To address this gap in the literature, we surveyed more than 100 American households participating in a communitywide, 12-week-long Meatless Monday challenge and tracked the changes in their knowledge, attitudes, beliefs, and food choices over a nine-month period. The case study provided herein highlights a number of key findings from our evaluation. Most notably, our results demonstrate the value of community-based efforts in initiating and maintaining dietary behavior change and provide preliminary insights into the unique roles of multilevel interventions and diverse stakeholder engagement in promoting healthier, more sustainable diets.
3 pages, This article provides a brief overview of Farm Dinner Theater (FDT), a novel intervention that positively influences the health and safety behaviors of senior family farmers and their family. The FDT uses principles of adult learning and engages the audience in conversations about their health and safety experiences. The FDT was developed through interdisciplinary community-engaged research and tested using a repeated measures design with 553 intervention and 317 comparison participants. Significant changes were reported and the FDT is now being used by Extension through the use of a toolkit developed by the project.
