20 pages., Via online journal., Consumers are concerned about the risks related to genetically modified (GM) food, and there is a need for agricultural communicators and educators to address those concerns. The purpose of this study was to explore Florida residents’ latitudes of acceptance, rejection, and noncommitment toward GM food messages. The findings from this study can be used to guide communication and education campaigns for GM food. An online survey was distributed to a non-probability sample of 500 Florida residents to fulfill the purpose of the study. The messages that most aligned with the respondents’ views toward GM food discussed how potential risks related to human health had not been adequately investigated and that GM food may be riskier to consume compared to traditional food. The messages that most opposed the respondents’ views were that GM food was safe for consumption and that it caused cancer in humans. People whose views most aligned with the message that GM food caused cancer in humans had the largest latitude of rejection, likely due to their extreme attitude, confirmation bias, and ego-involvement. The largest percentage of respondents accepted messages that aligned with their position but expressed noncommitment to messages that opposed their views. This lack of rejection and indication of alignment with messages related to potential risk and uncertainty indicated Florida consumers were unsure about the effects of GM food. Communicators and educators should acknowledge these concerns when delivering information about GM food to enhance the effectiveness of communication with consumers.
17 pages., Via online journal., Food waste has emerged as a major issue in the United States as the nation collectively sends more than 133 billion pounds of food to its landfills every year. In September 2015, the USDA and EPA announced an initiative to cut U.S. food waste in half by 2030. Between 2015 and 2016, nearly 100,000 posts about food waste have been published on Twitter, a microblogging platform that has been a hub of “slacktivism” since its inception in 2006. Using a conceptual framework of social cognitive theory, online activism, and crowdsourcing, we analyzed food waste conversation participants’ demographics, online communities, and proposed solutions. Data analysis was conducted with listening software Sysomos MAP and a qualitative content analysis of conversation content. The analysis revealed that more than 2,000 U.S. users engaged in the conversation, forming four discrete conversation communities led by influencers from government, news media, and environmental organizations. Proposed solutions to the food waste crisis included domestic or household behavior change, food-waste diversion and donation, recycling and upcycling, consumer education, and governmental action and policy. We recommend using Twitter to mine, test, and deploy solutions for combating food waste; engage with influential users; and disseminate materials for further research into the behavioral implications of online activism related to food waste.

19 pages., via online journal., The impact of knowledge on public attitudes toward scientific issues remains unclear, due in part to ill-defined differences in how research designs conceptualize knowledge. Using genetically modified foods as a framework, we explore the impacts of perceived familiarity and factual knowledge, and the moderating roles of media attention and a food-specific attitudinal variable (food consciousness), in shaping these relationships. Based on the differential effects on “negative attitudes” toward genetically modified foods, we provide further evidence that the measures of knowledge are separate concepts and argue against a one-dimensional view of scientific knowledge. We discuss implications for understanding the relationship between knowledge and science attitudes.

Via UI online subscription., The foodservice industry generates food waste by disposing of unserved food in the kitchen as well as uneaten food from consumers’ plates. In all-you-care-to-eat dining settings, such as university dining halls or buffet-style restaurants, food waste can be problematic because there is little monetary incentive to take less food. In addition, university dining facilities primarily serve young consumers who tend to be more wasteful than the average adult, further increasing the likelihood of waste. Appeals to money-saving have generally been identified as the best motivator to reduce consumer food waste; however, alternative motivators are needed when the quantity of food and its associated cost are not directly linked in all-you-care-to-eat settings. The purpose of this study is to determine the efficacy of a food waste reduction campaign in a university dining hall. Consumer plate waste was collected, sorted, and weighed in a treatment and comparison dining hall for a semester to assess the impact of the campaign on the quantity and type of food waste. Results reveal that the campaign had a modest, though insignificant, impact on waste behavior, but there were changes in students’ beliefs related to food waste, which may be an important first step to achieving behavioral change.
13 pages., via online journal., This paper conducts a detailed analysis of urban food and online networks in Bristol, UK. In particular, it examines social media postings of grass-roots food networks. Qualitative research identifies and analyses five core themes, from which two dominant discourses emerge. Analysis reinforces the multifunctional nature of city food but moves beyond dominant scholarly pre-occupations with nutrition and physical resources. Instead, the paper positions social and symbolic aspects as equal components within the convening power of food. To date, social media has been neglected in urban food research, although this is a space as well-tended and structured as the physical spaces it augments. The paper finds a relationship of limited collaboration between the grass-roots networks and the city council. While the former are dynamic and networked, the council adheres to a linear policy process that limits the scope of citizenship. The relationships examined here indicate implications for urban planning processes.

11 pages., via online journal., Pick a better snack™, a multicomponent social marketing intervention to promote fruit and vegetable (F&V) consumption, develops children’s ability to ask their parents for F&V. This study’s purpose was to understand this “pester power” from the child’s perspective. Pester power is leveraging children’s ability to convince their parents to purchase items in the store that they normally would not have considered buying. Focus groups were conducted with third-grade program participants (n = 30) and involved a traditional discussion format, a drawing activity, and role-playing. Most of the communication participants described involved straightforward requests, although a few children described behaviors such as whining. Most reported their parents responded affirmatively to requests, and some described a positive emotional response from parents. Parent denials were typically related to concerns about cost or the child not eating the item after purchase. Findings pointed to high self-efficacy and response efficacy among these children, although role-playing of effective asking strategies and addressing reasons why parents deny requests could enhance the program. Social marketing efforts including children should consider how pester power may play a role in moving adult behavior.

To shed light on the concrete ways of risk calibration by the media, this article compared the incident's coverage to a strikingly similar even in 2014 involving domestic produce. Content analysis showed how the specific discursive construction of both incidents led to two different levels of risk, primarily through the framing of the incidents by references to former experiences and symbolic connotations.
