Presented at the Society for Nutrition Education, Portland, OR, July 16-20, 1994., To develop a nutrition education program that will result in behavior change, one must know the current food intake behavior and nutrition knowledge base of the consumer. This descriptive study assessed the current nutrition knowledge base of consumers concerning fiber food sources and fiber-health relationships and food intake reflective of fiber sources. A survey was developed, piloted and mailed to 1,003 randomly selected households using a modified Dillman method. The survey included knowledge questions and food frequency and demographic information. A total of 466 usable surveys (52% usable return rate) and analysis of variance, form the basis of the following results. Sixty-six percent of the respondents were female and 34% were male. The majority were over the age of 30 (88%) and 66% had more than a high school education. Consumers with vocational training and come college education (mean +or- SD, 4.1 +or- 1.6) had a significantly higher knowledge score (score range 0-7) concerning food sources of fiber and fiber-health relationships than those who had a high school education (3.9 +or- 1.6) (p < 0.05). There was a trend of more fiber containing foods being consumed as the age of the consumer increased (p=0.057). When looking at food intake by food group, females consumed significantly more fruits and vegetables than males (p<0.05). From this information it should appear that extension nutrition about food sources of fiber and fiber-health relationships should target younger, non-college educated consumers and especially men.

27 pages., Via online journal., Local food is a popular subject among consumers, as well as food producers, distributors, policymakers and researchers in many countries. Previous research has identified that the definition of local food varies by context, and from country to country. The literature also suggested that environmental sustainability is one of the goals for many of the local food movements. While there is a substantial body of literature on local food internationally, limited research has been undertaken in New Zealand. This paper aims to understand how consumers define local food, what attributes they associate with local food, and the extent to which life cycle-based environmental aspects are represented in these attributes. Primary research employed quantitative methodology. This study identified that a majority of the respondents considered that local food may be defined as food that was produced in New Zealand and that support for community was the most important attribute associated with local food. Reduced GHG emission, conserving the landscape, and organic production were the life cycle-based environmental attributes that were associated with local food. This study provides a basis for further research into understandings of local food in New Zealand and how to improve communication among different social actors with respect to demand and supply of local food.

11 pages., Via online journal., Aquaponics, an integrated system with both hydroponic plant production and aquaculture fish production, is an expanding alternative agriculture system. Many key questions about the overall feasibility of aquaponic systems remain unanswered. Of particular concern for start-up and established producers alike are consumer perceptions and willingness to pay for aquaponic produce and fish. This study reports results and analysis of a consumer survey about perceptions and preferences for aquaponic-grown products that was conducted in Minnesota during Feb. 2016. Probit and ordered probit models are used to evaluate the probability of different consumer demographic segments having various levels of knowledge and perceptions about aquaponics. About one-third of respondents had previously heard of aquaponics, and upon learning more about the system through the survey, respondents tended to be generally neutral or favorable to aquaponics. Price might be an issue for many consumers, but many tend to believe that aquaponics can impact the environment in a positive way. The results represent a first step toward building knowledge about the potential consumer base for aquaponics, which is a critical piece in the system’s potential overall profitability. It appears that consumer education and marketing will be key for the expansion of the market.
10 pages., Via online journal., A survey of Connecticut consumers was used to investigate perceptions of various green industry retailers. Consumer perceptions of independent garden centers (IGC), home improvement centers (HIC), and mass merchandisers (MM) business practices and their perceived value were assessed. Analysis of variance and ordinary least squares regression models were used to analyze the data. Results indicated that customer service, knowledgeable staff, and high-quality plants are important factors when consumers are deciding where to shop. IGCs were ranked highest in perceived customer service, knowledgeable staff, and plant quality, followed by HICs. MMs were ranked lowest for the majority of measured business practices, with the most notable exception being price. Additionally, IGCs, HICs, and MMs are perceived differently across age cohorts.

AGRICOLA FNI 87003371, Socio-economic factors and the change in consumer attitudes toward pesticide use over two decades are examined. This investigation was done by repeating a 1965 survey. Findings show that in both 1965 and 1984 people were most concerned with the effects of pesticides on wildlife with increased concern in 1984 for farmers and farm laborers. It also shows that the concerns about both the impact of pesticides on the environment and on personal health are almost equal in strength; these results imply that the public has limited trust in the regulatory process.

7 pages., Via online journal, The emergence of Alternative Food Networks (AFNs) has drawn the attention of researchers from various fields, who try to understand and explain these new phenomena. The purpose of this paper is to explore how personal attitude and product quality perception influence relative satisfaction over participation in AFNs, therefore contributing to the literature on socially conscious consumerism. Structural Equation Modeling is used to investigate the determinants of consumers' attitudes towards AFNs, its influence on perceived quality of food products, and their relative influence over satisfaction with participation in AFNs. A survey was conducted among 210 AFN participants. The results from this study suggest that consumers' attitude towards AFNs directly influences the perceived quality of food products; moreover, the analysis confirms the relationship between these two elements and overall satisfaction with participation in AFNs. Finally, the research provides suggestions on how to improve consumers’ involvement and mainstream AFNs.
