11 pages, Virtual fencing (VF) is a modern fencing technology that requires the animal to wear a device (e.g., a collar) that emits acoustic signals to replace the visual cue of traditional physical fences (PF) and, if necessary, mild electric signals. The use of devices that provide electric signals leads to concerns regarding the welfare of virtually fenced animals. The objective of this review is to give an overview of the current state of VF research into the welfare and learning behavior of cattle. Therefore, a systematic literature search was conducted using two online databases and reference lists of relevant articles. Studies included were peer-reviewed and written in English, used beef or dairy cattle, and tested neck-mounted VF devices. Further inclusion criteria were a combination of audio and electrical signals and a setup as a pasture trial, which implied that animals grazed in groups on grassland for 4 h minimum while at least one fence side was virtually fenced. The eligible studies (n = 13) were assigned to one or two of the following categories: animal welfare (n studies = 8) or learning behavior (n studies = 9). As data availability for conducting a meta-analysis was not sufficient, a comparison of the means of welfare indicators (daily weight gain, daily lying time, steps per hour, daily number of lying bouts, and fecal cortisol metabolites [FCM]) for virtually and physically fenced animals was done instead. In an additional qualitative approach, the results from the welfare-related studies were assembled and discussed. For the learning behavior, the number of acoustic and electric signals and their ratio were used in a linear regression model with duration in days as a numeric predictor to assess the learning trends over time. There were no significant differences between VF and PF for most welfare indicators (except FCM with lower values for VF; P = 0.0165). The duration in days did not have a significant effect on the number of acoustic and electric signals. However, a significant effect of trial duration on the ratio of electric-to-acoustic signals (P = 0.0014) could be detected, resulting in a decreasing trend of the ratio over time, which suggests successful learning. Overall, we conclude that the VF research done so far is promising but is not yet sufficient to ensure that the technology could not have impacts on the welfare of certain cattle types. More research is necessary to investigate especially possible long-term effects of VF.

It can also be very fulfilling for the graduate mentor in terms of personal satisfaction and advancement of the research program. Learning to be a good major professor is an active process that depends on developing a formal framework of education and modifying that framework for each student based on past experiences and experimentation, advice from colleagues, and the individual personality of the student. Perhaps most important is for the graduate mentor to buy into the success and well-being of the student. Among the characteristics that a major professor could seek to instill in his or her students are critical and independent thinking, self-confidence, a thick skin, teamwork, laboratory skills and understanding, and the ability for hard work. Work to make science joyful by celebrating accomplishments, creating a fun environment in the lab, and stressing the societal value of science as compared to personal rewards or ambition.
6 pages, With most of the student attrition occurring early in undergraduate educational programs (Braunstein et al., 1997) it is necessary to interest and motivate students early on. The demographics of animal science students have shifted to students with minimal background in food producing animals. This presents a unique challenge as the current student population represents a diverse array of backgrounds and prior experiences. As a result, students enroll in undergraduate animal science programs with various expectations for their undergraduate degree and a focus primarily on careers in veterinary medicine. To engage all students, interest and motivation need to be generated. This review will use motivational frameworks as outlined by the self-determination theory, expectancy value theory, and interest, to explain the impact of the proposed solutions. Active learning classroom strategies are linked to increased knowledge compared with traditional, passive classrooms (Wells et al., 2019). Active learning shifts from a traditional teaching model to a student-centered model, which transitions instructors to facilitators of learning. This review summarizes current proposed pedagogies that have been researched in animal science classrooms such as experiential learning, flipped classrooms, hands-on animal experience, undergraduate research experiences, mentorship opportunities, capstone experiences, service-learning experiences, team-based learning, and cooperative learning. The limitations of these proposed pedagogies and the future research needed are also discussed.
11 pages, Individual background and demographics affect student perceptions of animal production. Understanding how science-based education alters these opinions is a critical aspect of improving university instruction as well as increasing consumer engagement in the poultry industry. The study objectives were to quantify the effects of student background, career interests, and science-based instruction on opinions regarding current issues in the poultry industry. Undergraduate students enrolled in a one semester poultry science course at Iowa State University between 2018 and 2021 were anonymously surveyed at the start and end of the semester as part of a 4-yr study. Students who opted to take the survey answered three demographic questions indicating their 1) livestock experience, 2) sex, and 3) career goals. The body of the survey consisted of 16 “poultry issue statements” where students were directed to mark a vertical dash on a 130 mm horizontal line indicating their level of agreement with each statement. Post-survey collection, the line was separated into 5 sections for discussion: responses within 0%–20% indicated strongly disagree, 21%–40% disagree, 41%–60% neutral, 61%–80% agree, and 81%–100% indicated strongly agree. Responses were analyzed using Proc Mixed in SAS Version 9.4 with a Tukey–Kramer adjustment for all pairwise comparisons using main effects including demographic categories, education (pre- or post-instruction), and year the survey was taken. Responses to various issue statements were affected by students’ livestock experience (P < 0.05; 6 out of 16 statements affected), sex (P < 0.05; 5 out of 16 statements), and ultimate career goals (P < 0.05; 4 out of 16 statements). Pre- vs. post-education responses differed significantly in 6 out of 16 statements (P < 0.05), and in 2 out of 16 poultry issue statements, the year of instruction affected student response (P < 0.05). These data indicate that individual student background, sex, and differing career interests impact opinions of current topics in the broiler and layer industries. Further, science-based education as well as the year the course was taken over consecutive semesters significantly altered student opinions.
13pgs, With a focus on journalistic discourse, this paper argues for a re-envisioning of food-system communication that takes non-human animals into account as stakeholders in systems that commodify them. This is especially urgent in light of the global pandemic, which has laid bare the vulnerability to crisis inherent in animal-based food production. As a case study to illustrate the need for a just and non-human inclusive orientation to food-systems communication, the paper performs a qualitative rhetorical examination, of a series of articles in major U.S. news sources in May of 2020, a few months into the economic shutdown in the U.S. in response to the COVID-19 pandemic. At that time, millions of pigs were brutally killed on U.S. farms due to the impossibility of killing them in slaughterhouses overrun with COVID-19 outbreaks. The analysis finds that media reporting legitimated violence against pigs by framing narratives from industry perspectives, deflecting agency for violence away from farmers, presenting pigs as willing victims, masking violence through euphemism, objectifying pigs and ignoring their sentience, and uncritically propagating industry rhetoric about “humane” farming. Through these representations, it is argued, the media failed in their responsibility to present the viewpoints of all sentient beings affected by the crisis; in other words, all stakeholders. The methodology merges a textually- oriented approach to critical discourse analysis (CDA) with social critique informed by critical animal studies (CAS), and the essay concludes with recommendations for journalists and other food-system communicators, which should be possible to implement even given the current capitalist, industry-influenced media environment and the demonstrated ruthlessness of animal industries in silencing voices inimical to their profitmaking.
17 pages, Environmental education (EE) programs, when combined with human-wildlife interactions (HWI), can trigger emotions, an essential part of attitudes that influence pro-environmental behaviors (PEB). We used participant observation and a post-event evaluation survey to investigate emotional response to HWI among participants from marine educational programs at the University of Georgia Marine Education Center and Aquarium, Savannah, GA. We found that during HWI participants demonstrated positive (e.g., empathy) and negative emotions (e.g., frustration) with animals, including misconceptions and negative perceptions toward snakes and horseshoe crabs. In addition, outdoor exploration, contact with wildlife (direct or indirect), biofacts exhibitions and live animal presentations were the practices that most engaged participants in the programs, indicating that animals (e.g., turtles and crabs) can increase participants’ interest in educational activities. By incorporating wildlife in EE practices, educators can engage individuals in activities and stimulate their emotional attachment to animals, which can encourage changes in perceptions, leading to PEBs necessary for environmental conservation.
12 pages, via Online Journal, Climate change compels us to rethink the ethics of our dietary choices and has become an interesting issue for ethicists concerned about diets, including animal ethicists. The defenders of veganism have found that climate change provides a new reason to support their cause because many animal-based foods have high greenhouse gas emissions. The new style of argumentation, the ‘climatic argument(s) for veganism’, may benefit animals by persuading even those who are not concerned about animals themselves but worry about climate change. The arguments about the high emissions of animal-based food, and a resulting moral obligation to abstain from eating such products, are an addition to the prior forms of argument for principled veganism grounded on the moral standing of, and concern for, nonhuman animals. In this paper, we examine whether the climatic argument for veganism is convincing. We propose a formulation for the amended version of the argument and discuss its implications and differences compared to the moral obligations of principled veganism. We also reflect upon the implications of our findings on agricultural and food ethics more generally.
14 pages, via Online Journal, The aim of this article is to show the relevance of the sociology of market agencements (an offshoot of actor–network theory) for studying the creation of alternative agri-food networks. The authors start with their finding that most research into alternative agri-food networks takes a strictly informative, cursory look at the conditions under which these networks are gradually created. They then explain how the sociology of market agencements analyzes the construction of innovative markets and how it can be used in agri-food studies. The relevance of this theoretical frame is shown based on an experiment aimed at creating a local trade scheme between manure from livestock farms and alfalfa grown by grain farmers. By using the concepts of the sociology of market agencements, the authors reveal the operations that are required to create an alternative agri-food network and underscore the difficulties that attend each one of these operations. This enables them to see the phenomena of lock-ins and sociotechnical transition in a new light.
19 pages, via Online Journal, This article discusses the interplay of public policy and market-driven initiatives to improve farm animal welfare (FAW). Over the last couple of decades, the notion of ‘market-driven animal welfare’ has become popular, but can the market deliver the FAW that consumers and politicians expect? Using the Danish pork sector as the empirical setting, this article studies efforts to improve private FAW standards following changes to general regulations. The analysis shows that ethical misgivings regarding the adequacy of current and prospective FAW standards are tempered by the economic considerations that guide the practices of some actors. The study also shows that efforts to improve FAW standards are contingent on collaboration and coordination across globalised markets among actors with divergent interests. The findings have important implications for market practices and public policy in relation to FAW.
19 pages, This paper describes a multimodal brochure assignment in an undergraduate animal science subject with a mixed cohort of animal science and veterinary science students. The assignment involved group work and peer feedback that allowed students to improve their brochures prior to submission. Support for the communication aspects of the assignment was developed by a teaching team consisting of the subject lecturer and two lecturers with a specialisation in academic language and learning. This support consisted of a rubric containing detailed communication rows, and annotated brochures illustrating written and visual features of this unfamiliar assignment genre. At the end of the subject, students were surveyed to seek their feedback on the usefulness of the assignment, the rubric (especially the detailed communication rows), the annotated brochures, and the peer review process. Results were highly positive, with students seeing value in this type of assignment for developing their communication skills. Students reported benefits in both giving and receiving (and using) peer feedback to improve their brochures. While giving feedback was considered to be helpful for enhancing both communication and understanding of the rubric, receiving feedback was mostly seen as beneficial for the purposes of editing and proofreading. Students reported that the main challenges of the assignment were in being concise and tailoring the language of the brochure to the target audience. The results suggest that while the support was viewed as very helpful, students may need more explicit and scaffolded guidance in tailoring their communication for a non-academic audience in a multimodal genre.

Data obtained from the survey highlight the need for improvement regarding food safety and can serve as a basis for development of collaborative education by Extension educators, regulatory agencies, and FMs. Extension professionals can play a proactive role in such training opportunities, focusing outreach efforts for training according to applicable findings and including online training venues to maximize reach to stakeholders.

11 pages, Massive open online courses (MOOCs) offer a unique platform through which Extension can provide valuable education. We explored The Meat We Eat, a MOOC designed to create a more informed meat consumer and increase perceptions of transparency surrounding meat production. Compared to pretest respondents (n = 490), students who completed the posttest (n = 226) had an improved attitude toward meat and slaughter, an improved perception of the meat industry’s transparency, and increased knowledge. These findings suggest the relevance and value of MOOCs as Extension activities for improving knowledge and attitudes toward animal agriculture and other topics.

19 pages, via online journal, Dairy farms pose many hazards to farmers and their employees, including the risk of injury caused by handling animals. On many farms, there is a lack of consistent information and training related to farm safety topics, including stockmanship, or safe animal handling. The purpose of this qualitative research was to explore effective communication strategies that support the application of stockmanship practices and more broadly support health and safety measures and the adoption of new behaviors by farmers and their employees. Research was conducted in three stages via in-depth farm tours and in-person interviews, a qualitative survey, and follow-up phone interviews with dairy farmers. Findings identified four values and moral norms important to dairy farmers and four barriers to implementation of farm safety practices. The research also revealed publications and in-person meetings as key channels of communication and on-farm consultants as important influencers. From the research findings, three major recommendations emerged. These include using a train the trainer educational model, engaging with professionals and encouraging farmer-to-farmer communication, and leveraging digital resources.

9 pages, Charismatic megafauna are arguably considered the primary attractor of ecotourists to sub-Saharan African protected areas. However, the lack of visitation data across the whole continent has thus far prevented the investigation of whether charismatic species are indeed a key attractor of ecotourists to protected areas. Social media data can now be used for this purpose. We mined data from Instagram, and used generalized linear models with site- and country-level deviations to explore which socio-economic, geographical and biological factors explain social media use in sub-Saharan African protected areas. We found that charismatic species richness did not explain social media usage. On the other hand, protected areas that were more accessible, had sparser vegetation, where human population density was higher, and that were located in wealthier countries, had higher social media use. Interestingly, protected areas with lower richness in non-charismatic species had more users. Overall, our results suggest that more factors than simply charismatic species might explain attractiveness of protected areas, and call for more in-depth content analysis of the posts. With African countries projected to develop further in the near-future, more social media data will become available, and could be used to inform protected area management and marketing.
13 pages, Much is known about the benefits of interacting with animals for learners. However, little is known about the animals’ potential influence on the communication ability of the presenter/educator. The purpose of this qualitative study was to describe the experience of undergraduate students who used live animals (baby chicks, turtles, salamanders, and non-venomous snakes) during in-class and outreach presentations and the animals’ role in influencing their communication ability. The influence of an instructor who teaches with such animals was also examined. A purposive sample of students enrolled in an introductory environmental education course open to all majors was obtained and five students agreed to participate in semi-structured interviews. Once audio was recorded and transcribed, the constant comparative method was used to analyze the data. Six reoccurring themes emerged. Presenting with a live animal (1) helped students feel less nervous while teaching, (2) increased presenter confidence, (3) promoted flexibility while teaching, (4) encouraged audience analysis, (5) helped create a positive, comfortable learning environment, and (6) influenced student career decisions. These themes aligned with Bandura’s triatic reciprocality model. Pre-service teacher education programs may consider using small, live animals, when relevant, with apprentice teachers as they can equally benefit the presenter and learning environment.

Explored the role of news media (two years of coverage by the New York Times newspaper, U.S., and El Pais, Spain) in constructing perceptions of nonhumans used for food and their treatment. Results showed that both newspapers played a major role in concealing the nonhumans' cruel treatment, but a distinction can be drawn between the crude speciesism of El Pais and the camouflaged, more deceptive style of the New York Times.
