Presented at the Society for Nutrition Education, Portland, OR, July 16-20, 1994., Recent survey findings show that consumers' concerns related to food safety are not congruent with actual risk. This may, in part, be attributed to media coverage of these issues. The goal of this Extension program was to improve the ability of consumers to make informed decision related to food safety be enhancing the media's reporting of related issues. A resource manual was developed and distributed to television, newspaper, and radio reporters in three Western states. The manual includes material on ten different food safety topics, sample news stories, a dictionary of terms, suggested readings, and resource directory. Telephone interviews conducted with 60% of the recipients (n=141) 3-6 months following distribution, indicated that 54% had used the manual. Those who had, found the manual timely (95%), and helpful (97%). The information provided on foodborne illness was used most often - corresponding to reporters' ratings of public interest.

Evans Collection, This article describes the development and preliminary evaluation of model materials designed as one step in helping consumers understand how scientists assess food risks, how that information is used in food safety policy decisions, and what individuals can do to protect themselves from residual risks. Focus groups provided feedback on draft materials, and experts reviewed the simplified descriptions of specific food risks to assure consistency with current scientific knowledge. We used pilot tests to examine (1) whether initial factual questions would prompt more learning, and (2) the relative effectiveness of two formats: a paper version similar to typical government pamphlets and an interactive computer version. People learned about food safety from either version. There was little evidence that the "prompting" questions led to more learning, nor did subjects learn more from the computer version. Results suggest that the materials made respondents more comfortable about their own ability to choose and prepare safe food and increased their confidence in actions taken by government and industry. - search through journal, In this paper, dimensions of the debate surrounding the application of gene technology to food production are discussed and a study assessing perceptions of the technology among a sample of the UK public (n=1499) is reported. The general picture that emerges from the study is one of people expressing low familiarity with the technology, with more people associating it with high risks than with low risks, and more people expecting it to provide low benefits than high benefits. Attitudes towards different applications vary significantly, as does trust in different potential sources of information about the technology. It is also shown that attitudes can be predicted not only by estimates of risks and benefits but also by perceptions of the involvement of ethical issues, but the perceived need for the technology, and by the perceived likelihood of improvements it is likely to bring to the quality of life in the UK. The results are discussed in the context of the need for greater public information about the technology and the realization that communication of risks takes place within a complex network of societal relationships.
