16 pages., As consumer demand for food labeling becomes increasingly important, producers and retailers
can include various labeling to attract new customers. This study investigates Connecticut
consumers’ preferences and willingness to pay for mushrooms marketed with various labels using
a latent class approach to identify classes within the market. Results reveal three market segments
(price/GMO-label, locally/organically grown, and traditional mushroom varieties). Overall, only
a third of consumers valued the “locally grown” or “organic” labels, so charging a premium for
these labels might alienate a majority of consumers. Finally, GMO labeled mushrooms are
discounted, but the non-GMO label receives little value.
3 pages, Various food programs present opportunities for marketing local food in Tennessee. Health-conscious consumers prefer the health benefits of local food over processed foods. To satisfy consumer demand, local restaurants are utilizing the services of local food vendors. Conventional grocery stores are broadening their food aisles to accommodate locally produced foods. Using data collected from an online survey of 250 producers, this research update reports on opportunities for marketing local foods in Tennessee.
Advertising effects were positive and stastically significant. The response to advertising was much more pronounced for reduced-fat milk types than it was for whole milk.
Survey and auction results reveal a lack of understanding of the label's meaning as well as a disconnect between the label's function (involving production methods) and consumers' motivations for buying organic (e.g., support for a local sustainable food system).
10 pages, In this paper, we evaluate the impact of COVID-19 on farmers market (FM) sales across the United
States during the 2020 operating season using survey responses from 420 market managers. Using
a multinomial logit model, we evaluate how certain market characteristics are associated with increased probabilities of market organizations gaining or losing revenue in 2020. We find that
SNAP sales changes, market location, and COVID-19 intensity impacted revenue outcomes. State COVID-19 policies for FM and the existence of FM assistance organizations had less of an impact.
4 pages, Sustaining farm profitability has been challenging for North Carolina smallholder farmers facing
market failure. Small farms earning between $10,000 or less and $50,000 annually in net farm income need alternative practices that will make them more profitable. This study assesses North Carolina small farmers’ understanding and attitudes towards value-added agriculture. We conducted farmer focus group interviews and analyzed the data using Qualitative Data Analysis Miner Lite. We found that the main drivers of value-added agriculture include improving on-farm profitability, product expansion, and market growth. High production costs and lack of government assistance are some of the factors limiting value-added participation.
