21 pages., Credibility is particularly important in organic food systems because there are only marginal visual and sensorial differences between organic and conventionally produced products, requiring consumers to trust in producers’ quality claims. In this article I explore what challenges the credibility of organic food systems and I explore how credibility of organic food systems can be maintained, using the Danish organic food system as a case study. The question is increasingly relevant as the sale of organic food is growing in Denmark as well as globally, and consumers’ expectations of organics continuously evolve. The inquiry is threefold, first I outline a conceptual framework for understanding trust and credibility in the food system, secondly I explore the developments in Danish organic food systems and thirdly discuss the challenges and opportunities for maintaining trust in the Danish organic food system. In the analysis I indicate eight key challenges: (1) unrealistic expectations, (2) blind trust and little motivation for extending their knowledge, (3) consumers assess the overall credibility of organic products, (4) ambitious ethical principles, (5) new consumer groups introduce new expectations, (6) frozen requirements in a changing world, (7) growing imports and labelling and (8) multiple versions of organics and the diversity is growing, as well as four aspects which may maintain the credibility of organics if implemented: (1) coordinate expectations, (2) communicate requested information, (3) institutional reform and (4) open communication of pros and cons of organic production.
14pgs, The unjust distribution of poor health outcomes produced via current United States food systems indicates the need for inclusive and innovative policymaking at the local level. Public health and environmental organizers are seeking to improve food environments from the ground up with locally driven policy initiatives but since 2010 have increasingly met resistance via state-government preemption of local policymaking power. This analysis seeks to understand how political actors on both sides of preemption debates use rhetorical argumentation. In doing so, we offer insights to the meaning-making process specific to food systems. We argue that advocates for local food-system innovations are forwarding understandings of food and community that contradict the policy goals they seek. We offer suggestions for local food and environmental advocates for adjusting their arguments.
18 pages., via online journal, As food products marketed as “gluten-free” become increasingly popular, many consumers start to exclude sources of gluten (e.g., wheat, barley, and rye) from their diets for both medical and non-medical purposes. The grain industry is facing a growing challenge to (re)boost consumers’ confidence in the healthiness and safety of its commodities. Using 561 participants recruited from the Amazon Mechanical Turk workers’ panel, this study implemented a 2 (pretzels vs. potato chips) * 2 (positive- vs. negative- frame) * 2 (wheat image vs. no wheat image) experiment to examine the effects of gluten-free labels on consumers’ perceived healthiness and safety of wheat, perceived benefits of labeled products, and their evaluation of the shown labels. Results showed that consumers evaluate the gluten-free labels most positively when they appear on products that could have contained gluten. For products that are naturally gluten-free, adding a gluten-free label only decreased consumers’ confidence in such labels. The presence of gluten-free labels increased consumers’ perceived benefits of the labeled products when they do not contain any misleading information (e.g., image of a wheat head). However, some gluten-free labels could have negative impacts on consumers’ perceptions of the healthiness and safety of wheat. Overall, food producers and marketers might have undervalued consumers’ literacy and overestimated their susceptibility to marketing strategies. We discussed the implications for food marketers, regulators, and communicators.
