13 pages., Via online journal., This paper reflects a major concern of nutrition and health educators in the developing world today, namely, how to formulate and implement participatory nutrition intervention programs with community members and key government officials who may come from a number of different development
sectors. Through the description of a project entitled "Social Marketing of Vitamin A-Rich Foods,"
the paper highlights the value of a two-way concept of nutrition communication and problem-solving
which is put in operation by establishing mechanisms for working with both institutional and community
groups. This entails calling upon such conceptual frameworks as behavior analysis, nutritional anthropology, media advocacy and social marketing as means for working with collaborators in a decentralized, nondirective fashion. The paper also illustrates how mass media and printed nutrition education materials can potentially support broad institutional and community development processes as well as providing a guideline of requirements for future programs and projects.

11 pages., via online journal., Pick a better snack™, a multicomponent social marketing intervention to promote fruit and vegetable (F&V) consumption, develops children’s ability to ask their parents for F&V. This study’s purpose was to understand this “pester power” from the child’s perspective. Pester power is leveraging children’s ability to convince their parents to purchase items in the store that they normally would not have considered buying. Focus groups were conducted with third-grade program participants (n = 30) and involved a traditional discussion format, a drawing activity, and role-playing. Most of the communication participants described involved straightforward requests, although a few children described behaviors such as whining. Most reported their parents responded affirmatively to requests, and some described a positive emotional response from parents. Parent denials were typically related to concerns about cost or the child not eating the item after purchase. Findings pointed to high self-efficacy and response efficacy among these children, although role-playing of effective asking strategies and addressing reasons why parents deny requests could enhance the program. Social marketing efforts including children should consider how pester power may play a role in moving adult behavior.
7 pages., via online journal., Pesticide use and pesticide residues in foods have been the subject of controversial public discussions and media coverage in Germany. Against this background, a better understanding of public risk perceptions is needed to promote efficient public health communication. To this end, this study captures the German public's perception of pesticide residues in foods. A representative sample of the population aged 14 years and older (n = 1,004) was surveyed via computer-assisted telephone interviewing on their attitudes and knowledge with regard to pesticide residues. Based on questions regarding their typical consumer behavior, respondents were classified into conventional and organic consumers to identify differences as well as similarities between these two consumer types. As assessed with an open-ended question, both organic and conventional consumers viewed pesticides, chemicals, and toxins as the greatest threats to food quality and safety. Evaluating the risks and benefits of pesticide use, more than two-thirds of organic consumers (70%) rated the risks as greater than the benefits, compared with just over one-half of conventional consumers (53%). Concern about the detection of pesticide residues in the food chain and bodily fluids was significantly higher among organic compared with conventional consumers. Only a minority of respondents was aware that legal limits for pesticide residues (referred to as maximum residue levels) exist, with 69% of organic and 61% of conventional consumers believing that the presence of pesticide residues in foods is generally not permitted. A lack of awareness of maximum residue levels was associated with heightened levels of concern about pesticide residues. Finally, general exposure to media reporting on pesticide residues was associated with more frequent knowledge of legal limits for pesticide residues, whereas actively seeking information on pesticide residues was not. The possible mechanisms underlying these findings are discussed.
24 pages., via online journal., The present study investigated the effects of communication styles, source expertise, and audiences’ preexisting attitudes in the contexts of the debate regarding genetically modified organisms. A between-subject experiment (N = 416) was conducted manipulating communication styles (aggressive vs. polite) and the expertise of the communicator (scientist vs. nonscientist) in blog articles. The results showed significant effects of communicator expertise and individuals’ preexisting attitudes on writer likability and message quality, depending on the communication style used. Expectancy violation was found as a significant mediator that explains the differences. These findings provided a plausible explanation for the way in which communication styles work in science communication contexts and offered practical implications for science communicators to communicate more strategically.
8 pages., via online journal., Social media bring various stakeholders of the agro-food system together into a new playing field. This article reveals the dynamics of this playing field and the ways in which this can influence the governance of agro-food sustainability. We delineate three pathways that highlight the ways in which social media can have implications for the governance of agro-food sustainability; firstly, Hypes on agro-food sustainability issues, secondly, opportunities for the self-organization of food movements, and thirdly, data for new forms of agro-food governance. We conclude that while mass self-communication on social media forms an emergent force that disrupts agro-food governance, it also generates data that forms a resource for powerful players to regain control.

The WHO Office for the Eastern Mediterranean Region (EMR) has recently released a regional nutrient profile model (WHO EMR) for the purpose of regulating the marketing of food and beverages to children. This study aimed at 1) analyzing the frequency and types of food and drink advertisements during children’s viewing time in Lebanon; 2) examining the nutritional content of the advertised food products in reference to the nutrient thresholds specified by the WHO EMR model; and 3) assessing the proportion of food advertisements that included health messages.

Youths who have more frequent family meals often have more healthful dietary behaviors. However, little is known about the context and processes related to how family mealtimes affect youths' dietary behaviors. To address this gap, we examined the context of family mealtimes and parent socialization that occurs during family meals through mealtime observations and interviews. Family mealtimes are valued by parents, and our findings can be useful to Extension professionals in educating parents and families regarding shaping of family mealtimes, feeding strategies, and nutrition.
7 pages., via online journal, To respond to the high prevalence of obesity and its associated health consequences, recent food research and policy have focused on neighborhood food environments, especially the links between health and retail mix, proximity of food outlets, and types of foods available. In addition, the social environment exerts important influences on food-related behaviors, through mechanisms like role-modeling, social support, and social norms. This study examined the social dynamics of residents' health-related food-shopping behaviors in 2010–11 in urban Philadelphia, where we conducted 25 semi-structured resident interviews—the foundation for this paper—in addition to 514 structured interviews and a food environment audit. In interviews, participants demonstrated adaptability and resourcefulness in their food shopping; they chose to shop at stores that met a range of social needs. Those needs ranged from practical financial considerations, to fundamental issues of safety, to mundane concerns about convenience, and juggling multiple work and family responsibilities. The majority of participants were highly motivated to adapt their shopping patterns to accommodate personal financial constraints. In addition, they selectively shopped at stores frequented by people who shared their race/ethnicity, income and education, and they sought stores where they had positive interactions with personnel and proprietors. In deciding where to shop in this urban context, participants adapted their routines to avoid unsafe places and the threat of violence. Participants also discussed the importance of convenient stores that allowed for easy parking, accommodation of physical disabilities or special needs, and integration of food shopping into other daily activities like meeting children at school. Food research and policies should explicitly attend to the social dynamics that influence food-shopping behavior. In our social relationships, interactions, and responsibilities, there are countless opportunities to influence—and also to improve—health.

Up to 70% of these illnesses are estimated to be linked to food prepared at foodservice establishments. Consumer confidence in the safety of food prepared in restaurants is fragile, varying significantly from year to year, with many consumers attributing foodborne illness to foodservice. One of the key drivers of restaurant choice is consumer perception of the hygiene of a restaurant. Restaurant hygiene information is something consumers desire, and when available, may use to make dining decisions.
11 pages., via online journal., This paper is concerned with how urban food activists related to the media during 2015, when Bristol was the European
Green Capital (EGC), how they represented themselves and how others represented their agenda. Our intention is to
inform the debates on urban agriculture (UA) and, more specifically, to contribute to discussions about ‘scaling up’
UA. To achieve this, we adopt a form of analysis that rests on Castells’ insights about contemporary protest movements,
the media and the role of communication technologies in constituting social power. By using Bristol, a city with a welldeveloped and studied urban agriculture movement, we suggest new areas for consideration that focus on the importance
of communication in the development of the movement. Our study relied only on publicly available data; newspaper
reports about the EGC and a sample of the social media used by the urban food networks in the city. We found that
the mass media was mainly concerned with reporting topics other than food and that urban food was not a salient
issue in their coverage. The Twitter network we analyzed was a loose constellation of different communities, which
shared materials that were mostly concerned with creating a shared, normative picture of urban food. By considering
the structure of these forms of media, we can observe the assembly of the forms of communication and their content.
The paper concludes that the self-representation of urban food networks at that time reveals a narrow focus of interest.
This emphasis may have contributed to the lack of connection within the city between potential allies. Our conclusion
supports similar research findings in neighboring communities, which have observed the limited connections of urban
food networks to the circuits of power and influence.
